German Chocolate Thumbprints

At church today our teacher in our Sunday School class was talking about how spoiled his kids were and  told us that “IF” (and believe me he doesn’t) but “IF” he believed in reincarnation, he would want to come back as one of his children. I started to think about that and realized that it would be great to come back as one of our grandchildren. We had lunch today with our 10 yr old grandson and I got him in trouble by handing him a giant Hershey bar as soon as we sat down. Of course he immediately unwrapped it and began to chomp away on it before his dad saw it and fussed at him for eating it before having something “healthy”. I don’t think you can qualify Mexican food as “healthy” but since all Sevy had had all day was donuts and now candy, I guess the Mexican food was a little better than what he had eaten all day. All this to say that when you think about how we Baby Boomers totally spoil our grandkids, it would be great to come back as one of them.  But since we won’t be coming back as anyone or anything, I think I will just go ahead and eat all the chocolate I can now.

Hence the recipe…

1/2 cup semisweet chocolate chips

1 table shortening

1/2 cup butter, softened

3/4 cup sugar

1 egg

1 tables strong coffee (brewed)

1 teas vanilla

2 cups flour

1 tables baking cocoa

1 teas baking powder

1/4 teas salt

Filling:

3/4 cup flaked coconut

3/4 cup chopped pecans (or walnuts)

1 teas vanilla

4 to 6 tables sweetened condensed milk (Eagle Brand)

Drizzle:

1/2 cup semisweet chocolate chips

1 tables shortening

Preheat oven to 350.

In a microwave, melt chips and shortening; stir until smooth. Set aside. In a large bowl, cream butter and sugar until light and fluffy. Beat in the egg, coffee, vanilla and melted chocolate mixture. Combine the flour, cocoa, baking powder and salt; gradually add to creamed mixture and mix well.

Roll into 1 inch balls. Place 2 inches apart on greased baking sheets. Using a Thumbie (which you can by on Etsy for $5.00 in the chocolatecastles store), make an indention in the center of each ball. Bake at 350 for 6-8 minutes or until firm. Remove to wire racks to cool completely.

Meanwhile, for filling, in a small bowl, combine the coconut, pecans and vanilla. Stir in enough of the sweetened milk to form a stiff mixture. Fill cooled cookies with filling (about a teas each). Melt chocolate chips and the shortening for the drizzle and then drizzle over the cookies. Store in an airtight container.

Yield: about 4 dozen

Pumpkin Cheesecake Pie

The pumpkins are out and am excited to find new delish ways to make use of them. I do remember the first year that Peter Pumpkin and I were married, I ask him to take me to the pumpkin patch down at Farmer’s market to pick out the perfect pumpkin that would adorn our porch. When we found it, I was so excited. There in the car seat beside us would be the first pumpkin that we had picked out and bought together. When “she” became (yes, it became a she as I named her Penny pumpkin), should we say a little decayed, ok, rotten, I ask him to bury her in our yard so we would always have  her with us. I do seem to get attached to things. He knew that if he buried her in our yard,  we would have a yard full of pumpkin ivy the next year, so he had just thrown her over the fence, and came in and told me he had taken care of her.  I didn’t bake any pumpkin dishes for a few days, just out of memory of Penny.  He didn’t tell me that until years later when we were in the heat of an argument how he had really “taken care of Penny” when he blurted out the words, “oh, and remember the year you told me to go bury Penny in our yard, well, I didn’t, I just threw her over the fence!” How cruel can a husband be??? So from that point on, I knew that this was not a man I could trust….I don’t let him pack away all my snowmen at Christmas now either, I just can’t take the chance. So, in honor of Penny,  here is a recipe that I found in a 2010 Taste of Home that I am making this weekend.

2 cups finely crushed pecan shortbread cookies (I will use Lorna Dune)

1 tables flour

3 tables butter, melted (as if the cookies don’t have enough in them already)

Filling:

1 (8 oz) package cream cheese, softened

1 (3 oz) package cream cheese, softened

1 cup sugar

1 can (15 oz) solid-packed pumpkin

3 tables flour

1 tables milk

1 teas ground cinnamon

1/4 teas each: ground ginger, nutmeg and cloves

3 eggs, lightly beaten

In a small bowl, combine the cookie crumbs, flour and 3 tables melted butter; press into an ungreased 9″ deep-dish pie pan. Bake at 350 for 9-11 min or until lightly browned. Cool on a wire rack.

For filling, in a large bowl, beat cream cheese and sugar until smooth. Beat in the pumpkin, flour, milk and spices. Add eggs; beat on low speed just until combined.

Pour into crust and bake at 350 for 40-50 min or until center is almost set. Cover edges with foil during the last 15 min to prevent overbrowning if necessary* (see below).  Refrigerate for at last 4 hours before serving. Top with whipped cream

*an easy way to cover edges is to place the pie plate on a piece of foil that is large enough to lap over the edges when it is brought up around them. I go ahead and do this at the beginning of the baking as it is so much easier to do this before dish is hot, then just remove the foil from the edges, leaving it under the pie, to finish baking about 25-30 min before pie is done.

QT for RC

Peter has reached an all time low. We had just finished mailing off some packages when RC  announced that since I had had a great lunch sitting outside Corner Bakery with a good friend after art class, he deserved at least a $1 drink from QT. My sister in law has been telling me about  QT and all the different tea flavored drinks. They have absolutely any flavor of tea, coffee or soft drink imaginable, allowing you to mix any flavor in any drink, all for $1.

Peter Pumpkin, being in the groove of the Fall season, had been out running errands all morning while I was in art class and never stopped for lunch.  I told him that I wanted a drink also, so in to QT we go. We don’t like to think of ourselves as retirees that stop in at Micky D’s for afternoon coffee and apple pie or that cute little ice cream cone they have, so we think that it sounds much more “hip” to say we stop at QT to get refreshed.

I head over to the tea dispensers and decided on Black Current-Mango flavored tea and turn around to see what he is choosing. He had disappeared. I walked all over the drink section, but no hubby in sight. I take my giant $1 drink and proceed to go looking for Mr. Excitement.

As I neared the hot dog counter where they are turning over and over and over, just to get the perfect doneness (how perfect can they get, we are, after all, in QT) all the while looking up at you and saying, “pick me, pick me”. I look over to see my husband who will not go to a buffet because the caliber of the food he says, is not quite up to par. He is standing over the turning hot dogs just waiting for the perfect hot dog to come along. Who is this person? He has gathered his clear plastic hot dog holder and is loading up the bun, which you take from under the counter, and loading it with mustard out of a little packet, chopped onions, that have probably been there for 5 days and then tops it off with pico di gallo (I’m sure that’s not how it is spelled, but I’m too lazy to go look it up).

This is truly a Candid Camera moment. We have been married for 18 years and this is the first time I have seen him get a hot dog from a convenience store. Apparently, the line we had to wait to check out tells me that other retirees have caught on that Micky D’s is not the “in” place for seniors who are out roaming around in the afternoon.  I was so disturbed by the time it took us to check out that I told him I was craving ice cream. We decided that maybe McDonalds wasn’t so bad, so we headed over there and treated ourselves to hot apple pies, ice cream cones and him a “free” senior coffee All that after the $1 drink and $1 hot dog. So now, Peter is excited that we have found  yet another place in town that he can get a lunch under $2.50….sometimes even heading over to Costco to get our free samples to go with our 3:00 senior coffee.  He says that he is going home to google QT and map out our food stops for when we are on the road next week. He did promise that he will alternate QT, Micky D’s,QT, Micky D’s, so as not to get bored with our meals along the way. I’m hoping that maybe he will splurge while traveling and treat me to a  from Taco Bell  meal…but he informed me  that would only be if our retirement check comes in before we leave.  Love this new retirement season, it just keeps getting more and more exciting!

We made a run to Costco today. Peter Pumpkin is already getting tired of me sending him to the store every couple of days to retrieve sugar, eggs or more flour. I was running around Costco sampling all the goodies that are there every Saturday when I look around and see him coming towards me with a 25 lb sack of sugar in our basket. I ask him what in the world would we do with that huge amount and he reminded me how many times I had sent him to the store in the past 2 weeks to get butter, sugar or flour. So…we came home with a basket full of baking items. We have emptied that huge bag of sugar into every piece of Tupperware we have in the house. This now gives me no excuse to not bake, so today, the first fresh apple cake of the season with browned butter frosting just came out of the oven. It truly signals that Fall has arrived. The recipe is on the blog so do not waste another day without making this delicious cake. It only takes 2 cups of sugar, so you don’t have to get a 25 lb sack! Peter is wanting me to share how giving he felt today. He sprang for 2 Costco hotdogs in stead of 1 that we usually share. Is he already in the holiday spirit or what?
We now have 8 lbs of butter, 36 eggs and plenty of flour & sugar. We are staying home tonight to take the “at home computer test to find out why our cholesterol is so high. Guess we can answer questions between bites of apple cake.

The book is written from different seasons of my life and is divided into the seasons of the year. It is my hope that as you read the stories, it will allow you to see your circumstances with a little encouragement and hope and maybe put a smile on your face and in your heart.  The recipes are taken from friends and family who have blessed our lives and food that has blessed our tables, no matter the season, no matter the table.

There Is No Such Thing As A Free Meal

I learned that yesterday. We kept our 10 year old grandson all weekend and just trying to think of things to keep him entertained was enough to exhaust us, much less actually doing all the things that we thought up. But yesterday did me in. Sevy wanted to go to the Flight Museum down at Love Field so we took him. Sounds great doesn’t it? Such an easy field trip, right? Well, half way through the museum, we discovered there was a whole other wing that had actually Southwest airplanes to go through. Since I love to fly and at one time, back in my crazy years, I actually interviewed to become a flight attendant. But since they didn’t make those cute little khaki pants in my big girl size, I guess they didn’t want to have to special order a pair, so I was turned down. They told me it was my age, but I’m not quite sure I believe them. Anyway, I have totally let that go, but when we go through the plane and there is the place where the flight attendant would sit, I decided to see what it would have felt like to actually sit where they sit and pretend for a moment that I was indeed working for SWA in my dream job. I had Sevy take my picture and off we went to the next exhibit. We are getting ready to leave when I discovered that my Brighton sunglasses are no longer in my pocket. I panic. I ran all over the museum asking total strangers if they had seen a pair of sunglasses when all of a sudden I remembered that I had sat down in that plane and maybe, they had fallen out of my pocket during my moment of dreaming of being Ms. SWA flight attendant. I ran, truly, I ran back to that part of the museum, up the steps to the plane and proceeded to the front where there on the seat, are my sun glasses. Even though I am to old to be running through museums and too old to be dreaming of being a flight attendant, I was so thrilled to have found them. We leave and ask Sevy what he would like for lunch. It is 1:00 and we are starving. It is hot and humid and I told him I didn’t care what we ate, it just had to have air conditioning and seats as my feet were feeling the effect of running all over the museum. We drive for a few minutes when I see that Randy is going on a street that wouldn’t be leading us to any restaurant. I ask him what in the world was he doing. He just said, “trust me”. I learned along time ago, not to trust him. Those words usually mean that an adventure of some sort is getting ready to unfold before my eyes. Sitting in the back seat, allowing the “boys” to take over the front, I am still trying to get my body temp under 100. Randy quickly pulls into the parking lot of Jackson’s Pottery. What in the world are we doing here? I knew he was not one to buy any type of greenery or pottery, in fact, he is the one that reminds me that he doesn’t like to throw money away on flowers, as I just kill them before you can say, “Miracle Grow”. But here we are parking when I look and see, oh no, they are having a “cook off” competition between the different vendors of barbeque grill brands. He parked and turned around to look at me in the back seat and said, “this will be fun, it is all the barbeque you want, and it’s free”. This will be great. Sevy is in agreement and we exit the car to go sample (if you can call filling up the plate they give you with fajitas, sausage, brisket, ribs and tortillas),sampling. As you stand there eating, of course, they are wanting you to buy either their grilling meat rub, their barbeque pit, smoker, or grilling tools. Of course, Randy is able to just take their free food and walk away. But me…well, that is harder for me. I feel guilty just standing there eating their food, and of course, as hot as it was, the vendors are soaking wet themselves. When I couldn’t talk Randy into buying anything, (he says that they are use to people coming and just eating, that they really don’t care if you buy anything or not) I can’t take it anymore. Any make up that was left after running around the museum is now running into my eyes and stinging like crazy and Sevy is running around trying to find a drink (free of course) since the “free sausage” is so spicy his mouth is on fire. We finally tell Randy we are done. We are hot, our mouths are on fire and we want air conditioning. He tells us we are no fun…
I don’t want to be fun. I want air conditioning, I want a huge glass of iced tea and I want to wash the make up out of my eyes. He is so giving…he says that if we by pass the Sonic on Forest Lane and can make it to the one on Park that it would be 2 by then and it would be happy hour so we could get our drinks half price.
PLEASE….SOMEONE FIND HIM A JOB! I can’t take anymore of these “free lunch adventures”. Being retired has ruined my husband. At least before retirement, I didn’t have to wait for Sonic Happy Hour if I was thirsty…
The day turned out fine after all, Sevy got a milkshake and Tater Tots and I got my Diet Cherry Coke, sitting in an air conditioned car. That’s enough adventure for me this weekend.
I promised him I won’t gripe anymore when he suggest that we go have a free lunch off samples at Costco anymore, at least it’s air conditioned.

Princess On The Porch

This day ranks among the top days in my last 20 years!(yes, and the days all the grandkids were born, so please, our adult children, don’t write me yelling that those days should be the most important) The book I have been working on for more years than I care to admit is being printed as I write. It will be in my hands in a week! Princess On The Porch is a collection of great recipes and stories that will entertain you and show you that we see life a little more humorous than is probably necessary, but we learned a long time ago that we would rather have laugh lines instead of red swollen eyes.
There are so many of you who have been encouraging me to do this for many years and I thank you for that.
Randy is already planning a law suit against me for the many stories I shared in the book about him. But I will worry about that later.
Princess On The Porch will be available in fine stores everywhere….ok, maybe just on my blog and Face Book, but a Princess can dream, can’t she?

Fallish Frenzy

It felt so good to have all my Fall Decorations out and placed strategically around the house, bringing a feel of festivity and food that I should be baking at all hours of the day and night.
Our kids have begun to call us Clark Griswald beginning in Sept, as I cannot wait to put up Christmas lights.
So beginning in September, we put up Fall trees, which turns to Christmas trees the day after Thanksgiving. I have promised sweet little Peter Pumpkin that I will make lots of pumpkin bread to sell to help pay our electric bill.
As soon as I got through placing the lights in the garland on the mantle,the trees decorated with Fall leaves and lights, plus a few lighted pumpkins in the courtyard, I sat down with a glass of tea to enjoy the different feel, Randy’s phone rang. I heard him answer and tell the person on the other end of the line that “yes, he would take care of it right away”! When he walked in I ask him what he would be taking care of. He said it was the electric company asking us to please turn off some of the lights. That we blew a fuse in the neighborhood and all the neighbors were calling, complaining. I couldn’t believe it. When I said, “really, you are kidding me” he said, “yes, but I’m sure that I will be having to come out of retirement to pay our electric bill.”
This reminded me of the Christmas that I decided that we should have blue lights outside instead of white. We went and bought all blue lights and Frosty proceeded to put up the 8-10 boxes outside. The yard looked beautiful and we were so proud. The next night, the lights automatically turned on around 6:30 and as I am in the kitchen cooking dinner. Randy drives in from work and as he walks quickly into the front door, I thought to myself that I hadn’t seen him move that fast since I ask him to marry me. When I looked up he came over to me and said, very seriously, “you won’t believe what is in the middle of the street! You have got to come look, it’s a plane, they tried to land, thinking that they were at the airport.” I told him that if this was his way of telling me that we have too many lights, it’s going to take more than that for me to give up my holiday lights.
If you are ever in Frisco and you see a glow by the tollway, you will know that our house is not far away…or a neighborhood that is totally in the dark, from us blowing a fuse.

Brunch for a Bunch

This morning we were invited to a friends house for a brunch. The friends who we were with are all friends who we use to have breakfast with once a month before moving to California. It was great to sit and visit around the table and catch up on simple everyday happenings, which is what makes friendships so great. It doesn’t take a lot of important happenings or earth shattering circumstances to make lasting friendships.
When we moved back here from California, I thought it would be easy coming back to Texas, because after all, it was our home. But, 4 years ago, I thought that moving to California was one of those “bends in the road”. But the truth is, it wasn’t. We truly fell in love with the beauty of California, the home that God had given us there, not to mention the friendships that were developed while we lived there. We were feeling very settled and oh so comfortable in the new environment that we had truly grown to love. But, once again, comes that “bend in the road” that we were not prepared for, moving back to Texas. I guess I fought it more than I expected.

After 8 months of being back, we are really beginning to feel like we are “home”, again. It has taken us a little longer than we anticipated, but days like today remind us that good friends are what makes life so sweet. We know that when we go back to California for visits, we will fit right in again, as that’s just the kind of people they are out there. But, just like this morning, as we all sat around the living room laughing and telling stories of grandkids, vacations and in-law stories, it was as if we had never left. It is times like today that make us feel so blessed to have great friends in our lives, no matter our location. Our lives have been so impacted by people who have reached out to us and loved us, even across State lines. We love you all and are thankful for so many precious friends God has put in our lives…that is what makes a heart feel at home. Thank ya’ll for not forgetting us!

Pam served scones, an egg casserole, fruit and she asked if I would bring French toast. My favorite recipe for baked French toast is from The Pioneer Woman. Everyone always loves it and ask for the recipe. Pam ask me to write it down before leaving her house. So here it is:

Butter for greasing the 9×13 baking dish
1 loaf of Crusty Sourdough or French Bread, cubed
8 whole eggs
2 cups whole milk
1/2 cup whipping cream
1/2 cup sugar
1/2 cup brown sugar
1 tables vanilla
Topping
1/2 cup flour
1/2 cup firmly packed brown sugar
1 teas cinnamon (I used 2)
1/2 teas salt (oops, I forgot to add that to mine)
1 stick cold butter
Warm syrup for serving
1 cup fresh blueberries for serving if desired
For the French toast, place cubed bread in greased baking dish, evenly over bottom. Crack the eggs in a large bowl and whisk with milk, cream, both sugars and vanilla. Pour evenly over bread cubes. Cover and place in fridge over night or if needed, you can spread the topping and bake immediately. I think it is better made the night before.
Topping:
Cut the cold butter in slices and mix with the brown sugar and flour with pastry blender until it resembles coarse crumbs. You can add 1 cup chopped pecans if you want. Right before you put the toast in the over, sprinkle topping over the bread and bake for 1 hour at 325, then after the hour, decrease oven to 300 and bake about 20-30 min longer, depending on how crisp you want the French toast. Serve with more butter, syrup and fresh blueberries.
This served 14 of us today along with the egg casserole, scones and fruit. If it is your only entrée, I think it would serve only 8.

Eagle Brand Pound Cake

OMGosh, you are kidding me! I cannot believe I just found a recipe using a can of Eagle Brand in a cake!
Eagle Brand, to me, should be in it’s own food group. I would probably even like liver if it was soaked in Eagle Brand. This recipe was in the old cookbook that had the “possum” recipe. I have to have some friends over so I have an excuse to make this wonderful cake.

1 lb (yep, you heard right, a whole pound) softened butter (do not use margarine as I will turn you in to the butter police)
2 cups sugar
8 eggs
1 can Eagle Brand Condensed Milk (there is only the one size)
3 cups flour
1/2 teas salt
2 teas vanilla
1 teas lemon extract (I will probably use butter extract as I like that combo of flavor with the vanilla)

Sift flour and salt and set aside. Grease and flour 10″ tube pan. Cream butter and sugar until light and fluffy. Continue beating, adding eggs, 1 at a time. Add flour and Eagle Brand alternately, blending just until well mixed. Add flavorings last.
Pour into pan and bake at 325 preheated oven for 1 hour. Reduce oven to 300 and bake about 25 min more, or until cake tests done.
Sprinkle powdered sugar over cooled cake if desired. Or set out different toppings, such as fudge sauce, fresh strawberries, ice cream or whipped cream when serving.
