Peanut Brittle A La Microwave

I admit it, I was one of those cooks who has turned up my nose to recipes that were made in the microwave aways snubbing any of “those” recipes because, “how in the world can anything made in the microwave” be as good as down home cooking in the ole oven. BUT….I am today posting my SECOND recipe that was made or, as my kids call it, “nuked”. Not only do I feel so hip, because it was so easy and quick, I have now time to sit and post it on the blog, then with the time left over from that, sit and read through cookbooks.

Yesterday, I found this recipe from a cookbook from the 80’s (yes, they did have microwaves back then) and because it only had a few ingredients, I figured that if it didn’t turn out, all I had wasted was 1 cup peanuts and a little sugar, so off I go to the kitchen and wa-la……..really good Peanut Brittle. Recipe could not be easier.

Microwave 1 cup sugar with 1/2 cup white corn syrup (after stirring together) in a glass bowl for 3 minutes.

Stir in 1 cup peanuts as soon as you take mixture from microwave and then microwave 3-4 min (depending on your microwave) or until light brown.

Add 1/2 tables butter and 1 teas vanilla, stir and microwave for 1-2 min more. Peanuts will be lightly browned and syrup very hot.  (If peanuts are raw, it may take longer to cook, so best to use unsalted, cooked peanuts)

Add 1 teas baking “soda” to mixture and stir quickly until light and foamy. Quickly pour mixture onto lightly greased cookie sheet that has sides to it. Let cool for 1 hour and then break up into pieces

NOTE: Cooking times will vary according to different microwaves. Watch carefully and add time in 30 sec intervals.

3 Minute “Cup” Cake

I awoke this morning to a most delish idea from a blog called Two Chums. They had written about a cupcake that you can make from start to finish in less than 10 min., so thought I would share this with you. Am making them tonight for dinner.

They found it in a Food Network magazine and said it is so good and much like the “molten chocolate cake” that is so infamous around different restaurants.

Myself, like Two Chums, have never “baked” anything in the microwave oven before so it is broadening my horizons. You really do bake them for 3 min in coffee mugs in the microwave. I think you are going to like this. So easy and so yummy.

8 oz butter

8 oz dark chocolate, chopped

3/4 cup sugar

3/4 cup flour

4 eggs

1 teas sea salt

1 teas orange zest or vanilla extract

Whipped cream and shaved chocolate

Put butter and chocolate in glass bowl and microwave for 1 min on high. Stir until all is melted.

In another bowl, mix flour, sugar, eggs, salt and flavor of your choice, zest or extract.

Whisk in melted chocolate mixture. Divide into mugs (4-6, depending on how many you need or how large you want the “cup cakes”)

Place mugs in microwave and cook on high for 3 minutes. Test the cupcakes. They should be firm on the sides and soft in the middle. Cook 30 sec to 1 min, if needed. Add whipped cream and chocolate shavings and serve immediately. Will post pictures when I make them.

Can’t wait to try them tonight. Write or send a picture if you make them. Have a Chocoholic Weekend!

Spicy Cheeseburger Sliders

YUM!!!!! Taken from Food Network Magazine, my neighbor, Nancy, left a copy of this at my front door the other day. Since sliders are a favorite of ours and since not only are they so good, but actually a “cute” food to eat, they are just fun to make.

1 lb of 96% lean ground beef

9 small whole wheat hamburger buns, split, divided (we like the small Hawaiian bread buns instead)

1 clove garlic, minced

1/2 teas ground chipotle chili powder

2 slices pepper jack cheese, cut in quarters

Toppings: barbecue sauce, lettuce, tomato slices or pickles (maybe a little chopped jalapeño pepper?)

Tear one hamburger bun into pieces. Place in food processor or blender container. Cover, pulse on and off to form fine crumbs.

Combine bread cubs, beef, garlic and chili powder in medium bowl, mixing lightly but thoroughly. Lightly shape into eight 1/2 ” thick mini patties.

Place patties on grill over medium hot coals. Grill, covered 8-9 min  (gas grill 9-10 min) until instant-read thermometer registers 160, turning occasionally. If you don’t have a thermometer, you will know they are done when you are soaking wet from standing over the grill outside in the 100 degree summer heat.  Evenly top with cheese during last minute of grilling.

Place burgers on bottoms of remaining eight buns. Top with desired toppings. Top with top of bun.

Lemon Strawberry Trifle

Since I needed two trifles for tonight, I decided to do a completely different flavor one for those who might not like chocolate. (Is there really anyone out there who doesn’t like chocolate?)

Bought an angel food cake, quart of strawberries, strawberry jello,  lemon flavored instant pudding mix and whipping cream.

Clean and slice strawberries and set aside. In a small saucepan, bring to boil: 1 cup water, 1 cup sugar and 4 tables cornstarch. Stirring continually till thick and clear. Take off heat and add 3 heaping tables of strawberry jello (you cannot use sugar free for this, won’t work) Stir till gelatin is dissolved. Be sure mixture is completely cool before layering it with the whipping cream.

Beginning with a little of the strawberry glaze in the bottom of the bowl, layer cubed angel food cake, lemon pudding which you have made according to directions on box, strawberries and glaze, then whipping cream. Repeat layers ending with whipping cream.

Chocolate Brownie Trifle

Am headed to Bunco tonight and it is my turn to bring desserts, so thought I would take something that is cool and creamy. Made some brownies, chocolate pudding and bought some caramel, toffee bits and whipping cream and made this pretty trifle.

Layered them in the bowl and look what you get. A really pretty dessert that you can put together so quickly.

1 small package chocolate instant pudding, made according to directions

1 box brownie mix (I did make homemade because I forgot to buy brownies, the recipe is on the blog)

1 pint of whipping cream, whipped with 1 cup powdered sugar

1 1/2 cups toffee bits

1 jar of caramel sauce (used Smuckers)

Pour a little caramel in the bottom of the trifle dish. Layer rest of ingredients beginning with cubed brownies, pudding, 1/2 cup toffee bits and then a third of the whipping cream. Repeat layers ending with whipping cream and then sprinkle last 1/2 cup of toffee bits on top. Cover and put in fridge until serving time. Should serve between 10-12

New Look for Blog

Several of you have told me that you are having trouble finding recipes on this new format, so “due to popular demand” am going back to the old format. When you are looking for a certain recipe, there is a magnifying glass in the upper right hand of the page. Click on that and it will give you a space to write in the recipe you are looking for. Hope this helps.

Once again, thank you so much for reading the blog. I am spending a little more time at the moment working on finishing my first cookbook. It is my goal to have it finished by the end of this year.

Blessings to you, Trudy

Dee’s Flank Steak

Dee made this steak for us when we were invited to her house for the weekend up in the mountains. It was just delicious and she has been kind enough to share it with us. Thank you Dee for sharing your cooking talent with us….it is such a great flavor and such a great dish to serve guests. Will always be a winner!

DEE’S FLANK STEAK MARINADE

2 cloves of garlic, minced

½ cup of wine vinegar

¼ cup of soy sauce

¼ cup salad oil

¼ cup light corn syrup

1 tsp. crushed rosemary

½ tsp dry mustard

Mix and Marinade 1 flank steak that has been tenderized. I have the butcher do this for me. I ask him to run it through the tenderizer once. If not then you can do it yourself by using a fork and “punching” the steak all over.

It’s best if you marinade over night, but if not at least a few hours…then bar-be-que.

I usually double this recipe and marinade 2 flank steaks.

Griswalds Family Vacation Comes to Pasadena

You have probably noticed that you haven’t seen a post on the ole blog for me in about 2 weeks. There is a very good reason for that. We have had out of town company which took me a few days to recover from having a 3 mo old, a 3 yr old and a 10 yr old in the house. Now I love grandkids as much as the next baby boomer grandmother (but please call me Honey Nonnie instead of Grandmother, just not ready to go there yet) but as sweet as these little darlings are, there is just an evil side to them that makes you just want to stand up and cheer as you watch the car back out of the driveway.

We came into the house and just stood at the doorway and didn’t say a word. We listened and just continued to stand there a minute in a daze. For the first time in 11 days, it was quiet. Not just quiet as when they are taking naps, but total silence. It truly was a Hallmark moment. We looked at each other and really couldn’t decide what to do next. Did we just want to go sit down and enjoy the silence? Did we want to dive in and de-babize the house as in picking up raw crushed macaroni off the floor, or pick up all the shoe horns that had been brought out of Randy’s closet? Did we want to begin to throw out the rest of the frozen chicken nuggets that would not be eaten or all the half drank cans of soda sitting there in the fridge? Would the toys in the bathtub be ok if we left them for a day?

We decided to just sit and rest. After all, it had been a while since we had had 3 grandchildren in the house for that long all at the same time. The TV was actually smiling that it wasn’t having to show 39 episodes of Sponge Bob today. We could actually watch what WE WANTED!!!

Before we sat down on the couch, we did notice that there were toys under the cushions and actually retrieved a Piggy balloon from the fireplace. There was money in the computer printer and pink fingernail polish on the flowered couch. Guess the 3 yr old decided that there weren’t enough flowers on the couch, so he added his touch to the artistry. The couch looks great with the new hot pink flower. Adds so much to the red flowers beside it.

Don’t get me wrong, these precious little “gifts from God” are so sweet, when they are sleeping. The naps just don’t last as long as we wanted.

We have now adjusted to our “normal” week when it is just Randy and I in the house. It’s odd that we look back at the week and now only remember the precious times of sitting on the couch holding the 3 month old and trying to get him to smile. Or walking with the 3 yr old down the street listening to him yell out at his pretend friends up in the trees, all the while collecting “pinecones” from the magnolia trees. The memory of the 11 yr old asking if he could make a pallet in our room so he could sleep in there. I loved that, because it will not be too long before he will be wanting to be as far away from “grandparents” as possible.  So we cherished the talks we had with him while taking him to get ice cream, just by himself, is priceless. Just like childbirth, you forget the energy and patience it takes to have kids in your house. We choose to remember the things that give us sweet memories.

After all, the raw macaroni was a great exfolliator for our feet. Think we will just leave it on the floor.

All Sold Out Chicken Pot Pies

Taken from one of my fav recipe books, The Pastry Queen, which was given to me by a good friend, this chicken pot pie has people calling the PQ early on Tues mornings when she makes them to reserve them. The more she makes, the more she sells, unable to keep up the demand. She has graciously put the recipe in her cookbook so those of us unable to drive to Fredricksburg, TX can now experience these great little pies.

Filling:

3 tables unsalted butter

1 medium sized yellow onion, chopped

1 large russet potato, peeled and diced

3 cloves of garlic, minced

1 red bell pepper, diced

8 oz button mushrooms, sliced

1/2 teas crushed red pepper flakes

Salt & Pepper

1 purchased cooked rotisserie chicken or 1 whole stewed chicken, cooled

8 oz fresh green beans, cut into 1″ pieces (optional)

1 (8 oz) package frozen peas (optional) *See below regarding carrots.

Cream Sauce

1/2 cup (1 stick) unsalted butter

1 cup all purpose flour

2 1/3 cups chicken stock

1/2 cup heavy whipping cream

Dash of hot pepper sauce, such as Tabasco

Salt

Crust

1 cup (2 sticks) chilled unsalted butter

3 cups all purpose flour

10 oz chilled cream cheese

1 teas salt

1/4 teas pepper (preferably white pepper)

1 egg for brushing over the dough to brown it

To make filling:

Melt butter in a large saute pan set over medium heat. Add the onion and potato; sauté for 5 min. Add garlic, bell pepper and mushrooms and sauté for about 15 min, until potatoes are tender. Stir in crushed red pepper flakes and salt and pepper to taste.

While the vegetables are sautéing; skin the chicken, pull the meat off the bones and shred the meat or cut into bite-size pieces. Place the green beans in a microwave safe bowl and add enough water to cover. Cover the dish and microwave on high power for about 10 min, until beans are tender. Drain thoroughly. Stir the beans, peas, and chicken into the vegetable mixture. Set the filling aside.

*(Because we aren’t a “pea” family, we substitute chopped fresh carrots for the peas and make it green beans and carrots instead of green beans and peas)

Cream Sauce

Melt the butter over medium heat in large saucepan. Add the flour and whisk until smooth. Whisk in the chicken stock and cook the sauce over medium heat until it thickens to the consistency of a cream soup. Add the whipping cream, hot pepper sauce and salt & pepper to taste.

Pour the cream sauce over the chicken filling and stir to combine. Fill individual 1 3/4 cup capacity oven-safe bowls 3/4 of the way to the top with the creamed chicken filling.

Crust:

Preheat oven to 375. Cut the butter into 16 pieces. In the bowl of a food processor, fitted with a metal blade, pulse the butter and flour until crumbly. Add the cream cheese, salt and continue pulsing just until the dough forms a ball.

Set the dough on a flat surface dusted with flour. (I use waxed paper, dusted with the flour, instead of just putting on cabinet, makes clean up so much easier)

Using a floured rolling pin (please tell me you didn’t sell your rolling pin in the garage sell), roll out the dough to 1/4″ thickness. Measure the diameter of the pot pie bowls-such as 4-5 in across and cut out dough rounds that are 1 1/2 ” larger in diameter. Whisk the egg in a small bowl. Lay the dough rounds on top of the pot pies, making sure the dough hangs evenly over each bowl. Brush the dough lightly with the beaten egg. Bake the pies for 20-25 min, until golden brown. Serve immediately with a salad and sweetened iced tea.
