Veggie Dinner With Squash Dish (Calabacita)

How was everyone’s Thanksgiving? Hope that all of you had the blessing of gathering around the table with family and friends to make some wonderful new memories. We were blessed to have two of our kids and their families here. Isn’t it just so wonderful to be able to enjoy your adult children? I heard about a family gathering that escalated into yelling and screaming because some of the relatives began to argue about something. That is something I just cannot even begin to understand. Years ago, my oldest sone, Jason, was in college and some of his friends came over when Jason came home for the holidays. They began to tell me how Jason would just walk into a room that was full of college boys, arguing over sports, or girls or something and Jason would yell “why can’t we all just get along?” and everyone would then start laughing. It is with a heart full of thanksgiving that we do enjoy our kids and so appreciate the time which we spend with them. Well, all that said, last night, after a full 5 days of cornbread dressing, potatoes, turkey, ham, pies and cakes and wonderful rolls, we realized yesterday that even our very unhealthy bodies were tired of all the greasy, rich meats and dishes. So we put on a pot of beans, cut up a head of cabbage, onion, cut up a couple of potatoes and got the small iron skillet out for cornbread. As I was looking in the fridge to get more butter out, (do not even think about asking me how many pounds of butter I have used the last 2 weeks, because I am too embarrassed to ell you.Lets just say that there is now an empty corner in the fridge where all the butter was stored) there was the Mexican squash I had bought, thinking that I might use it in a dish for Thanksgiving. But, there it was just sitting there waiting to be cooked. So out it came and it was such a great addition to our veggie meal. So, (after all the above 1000 words that was probably more than you ever wanted to know about our Thanksgiving) here is the recipe I used and it was so good.

2 cups cut up Calabacita Squash (Mexican squash)
2 tables olive oil
1 tables unsalted butter
1 teas fresh oregano
1/2 teas garlic powder
Salt and pepper to taste

Heat oil and butter in a small skillet. Add the cut up squash and seasonings to skillet. Stir until squash begins to brown a little on the edges. It was at this point that I added about 1/4 cup water to the pan and put a lid on so the squash would get tender. As it cooks, stir every few min so squash does not burn. If you like the flavor of the oregano, and garlic, you might like to add a little more per your preference. This squash is also great in vegetable soups.

Italian Meatball Munchies

Last night we had spaghetti & meatballs for some friends. Since we had some sauce and meatballs left over, I decided to use them in a new way this evening. Using slices of baguette, we sliced a couple of the meatballs and made our own little munchies. As we were eating them, it dawned on me how great these would be for a party appetizer. Perfect little snack when you are wanting a light meal, but want something with lots of flavor. *recipe for spaghetti & meatballs are on blog

1 baguette, sliced thin

Left over spaghetti sauce or pizza sauce
mozzarella cheese
meatballs, sliced thin

Olive oil
butter
garlic powder

Use as many baguette slices as you need. Using equal amounts of butter and olive oil, melt together and add garlic powder to taste. Using a pastry brush, spread the garlic-olive oil-butter mixture onto one side of each bread slice. Place bread slices on a baking sheet and place in oven and broil until slices are lightly toasted.
Remove from oven and turn slices over. Spoon some of the sauce onto each slice and then place a slice of meatball on each piece. Sprinkle cheese over the top and place back in oven and broil until cheese is melted and sauce is bubbly.

Serve immediately.

Totcho (tater tots meet nachos)

A dear sweet friend sent me a page out of a magazine which gives all the cakes which were popular during the last century. It was so interesting to see how peoples taste change through the years. As I was looking over the cake info, I happened to turn the page over and wa la…here was these delicious looking Totcho’s. For those of you who love tater tots, this one will certainly be one you will want to serve for all those game watching days.

Bake frozen tots as directed on the bag (depending on how many you want to serve will depend on how many tots you use.)
Meanwhile, saute a pound of ground hamburger meat with your favorite taco seasoning. Drain meat, then top the tots with the taco flavored meat. Sprinkle shredded Cheddar cheese and bake for about 5 minutes. Top with drizzled sour cream, chopped black olives and chives.
Add some heat with a drizzle of your favorite hot sauce or Sriracha. Instant Appetizer which will certainly score a touchdown with your guests.

Cheese Twists

Yesterday while I was baking in the kitchen, I happened to turn on the tv. Pioneer Woman had a whole show focusing on Puff Pastry and using it for appetizers and desserts. I ran (ok, maybe I took the car) to the store and bought a box of the Puff Pastry Sheets and came home and made the cheese straws that I watched her make. They were delicious! We took them to our kids house last night since Jodi was having us over for lasagna. I did change up her recipe just a bit. I added some Italian seasoning and garlic. All of us thought they were so good that I will be making them and serving them with olive tapenade for bunco next month.

1 sheet of Pepperidge Farm Puff Pastry, thawed (follow directions on box for thawing)

When the sheet is thawed and you are able to unfold it, lay it out on a piece of lightly floured wax paper. Using a rolling pin, roll out the sheet a little to where it becomes a little thinner and larger  rectangle.

Using softened butter or olive oil, (i used butter) spread the butter or oil all over the puff pastry. I sprinkled some garlic powder over the butter. Spread about 1 cup of parmesan cheese over the sheet. Then using about 1 cup cheddar cheese, sprinkle that over the parmesan.  Shake some Italian seasoning over the cheeses. Then using the rolling pin, roll the cheese into the pastry sheet, so that the cheese sticks to the pastry more. Cut the sheet in half vertically, then horizontally until you get 12 strips. Twist each strip and place on a lightly greased baking sheet. Using an egg wash, (that is just taking an egg, add about 1 table water and stir until egg is blended with water) rub egg wash over the twist with a pastry brush to give the pastry a golden brown color.

Place in a preheated 425 oven for about 12 minutes or until each twist is golden brown.

Place on wire rack to cool and serve along side olive tapenade, or salad sticks or just plain as an appetizer.

Bruschetta Melts

One of my favorite foods is bruschetta. Sometimes on a Friday or Sunday evening, instead of making dinner, we choose to just have a plate of bruschetta. When I saw this in a Taste of Home magazine from 2015 (ok, I have been kinda busy and am just sitting down to go through some old magazines) I knew this would be our dinner next time we went for a little healthier dinner than running to Baskin-Robins for a hot fudge sundae. Yes we do that about once a month, nothing like a gorgeous hot fudge sundae for dinner….try it sometime. It will make your heart sing.

1/4 cup olive oil

1 teas lemon juice

1/2 teas seasoned salt (such as Lawry’s)

1/2 teas pepper

1/4 teas garlic powder (I will use probably about 3 cloves as we just cannot get enough garlic, hum…I wonder why we don’t have many friends?)

4 plum tomatoes, finely chopped

1/2 cup finely chopped sweet onion

2 tables minced fresh basil

1 carton (8 oz) spreadable chive and onion cream cheese

24 slices French bread (1/4″ thick)

2 cups (8 oz) shredded mozzarella cheese

Additional minced fresh basil

Preheat oven to 425. In a small bowl, wish the olive oil, lemon juice, salt, pepper, garlic powder until blended. Stir in tomatoes, onion and 2 tables fresh basil

Spread cream cheese over French bread slices and place on greased baking sheets. Top with tomato mixture; sprinkle with shredded mozzarella cheese.

Bake 7-9 min or until mozzarella cheese is melted. Sprinkle with additional minced fresh basil if desired.

Cheese & Bacon Dip

Party Season is upon us!  This delicious and easy dip will be perfect for football parties or friends coming over for a visit!

1 (8oz) cream cheese, softened

8 oz of shredded Cheddar Cheese

1/2 cup milk

1/2 teas onion powder

1/2 teas dry mustard

3-5 drops of bottled pepper sauce (such as Tobasco)

6 slices of fried crisp bacon, crumbled

Combine all ingredients and mix well! Place in a greased small baking dish and bake for about 15-20min in preheated 350 degree oven! Serve with chips or crackers

Texas Trash Warm Bean Dip

It is exciting to sit and begin to look for recipes for Super Bowl parties. Can’t wait to serve it with homemade chips at the party. Taken from Todd Yancey & Susie Pierce

1 (8 oz) package cream cheese, softened

1 cup sour cream

2 cans (16 oz each) refried beans

1 packet Taco Seasoning

2 cups cheddar cheese, shredded

2 cups Monterey jack cheese, shredded

Directions:

Preheat oven to 350. Mix together cream cheese and sour cream in a large bowl. Mix in refried beans until combined. Stir in taco seasoning.

Spray a 9×13 baking pan with Pam. Spread mixture evenly into bottom of baking dish. Sprinkle the top with both cheeses.

Bake for 25-30 minutes or until cheese is melted and beginning to lightly brown. Serve with chips. When we were short on chips one night, I cup up flour tortillas and started frying them. Now, that is all our kid want is the homemade fried flour tortillas, sprinkled with a little garlic salt and a little cumin!

Beans & Brisket

A friend of min today told me that her family had fallen in love with this recipe. Wanted to post it again, as there were several ladies that were there that said to send the recipe to them and since I didn’t know for sure they knew how to search for it..here it is. Great easy meal for company. We are having it Tues night!

A good idea is to soak the beans overnight. Just put the beans in a pan or large bowl and cover them with water and allow to sit overnight. This softens them and allows them to cook a little faster.

3 to 6 pound brisket or large roast, trimmed

1 can rotel tomatoes

1 qt plus 2 cups water

1 pound pinto beans

1 large onion, sliced

1 large tomato sauce (16 oz)

Wash beans and drain. Put in bottom of large roaster. Season the brisket or roast to your liking and lay on top of beans. Then onion, rotel and tomato sauce. Pour inthe water. Cover and cook at 250 degrees for 12 hours.

Super Bowl Whoopie Pies

Since Whoopie Pies are one of the best inventions EVER, I decided that they would make a great dessert for the Super Bowl Party. So I just made chocolate whoopee pies and made the frosting in the navy blue and green of the Seahawks for between the cookies. I just ate 3 of them. Hopefully there will be some left for Sunday. They are easy to wrap individually in Saran and then in a baggie to stay fresh for Sunday. Very easy make-ahead dessert.

1/2 cup softened butter

1 cup sugar

1 egg

1 teas vanilla

2 cups flour

1/2 cup baking cocoa

1 1/2 teas baking soda

1/2 teas baking powder

1/2 teas salt

1 cup milk

Filling

1 jar (7 oz) marshmallow creme

1/2 cup shortening

1 teas vanilla

2 cups powdered sugar

Preheat oven to 400. In a large bowl, cream butter and sugar until light and fluffy. Beat in egg and vanilla. In another bowl, whisk flour, cocoa, baking soda, baking powder and salt; add to creamed mixture alternately with milk, beating well after each addition.

Drop dough by tablespoonful (I used a medium size cookie scoop) 2″ apart onto greased baking sheet. (again, I use a coated sheet, so if you use them, do not grease the sheet) Bake 6-8 min or until set and tests done.

Remove from pans onto paper towels or wire racks to cool completely.

For Filling

In a large bowl, beat marshmallow cream and shortening until blended. Beat in vanilla and powdered sugar until smooth. I add food coloring to a little milk and beat into mixture. Spread on the bottom of half of the cookies and then top with the other half. Wrap in plastic and keep in sealed container for up to 3 days.

Makes about 2 1/2 dz.

Mushroom Bread

Looking for a filling meatless appetizer for Super Bowl? This is taken from Taste of Home and sounds like a great one.

1 tube (8 oz) refrigerated crescent rolls

2 cups thinly sliced fresh mushrooms

1 tables butter, melted with garlic powder tailored to your liking

1/2 cup grated Parmesan cheese

1/2 teas Italian seasoning

Fresh ground pepper to taste

Preheat oven to 350. On an ungreased baking sheet, unroll crescent dough into one long rectangle; press perforations to seal. Prick dough several times with a fork. Bake 5 minutes.

Meanwhile, in a bowl, toss mushrooms with melted butter (with added garlic powder); arrange on crust. Sprinkle with cheese and seasonings. Bake 12-14 min longer until crust is golden brown and cheese is melted. Cut into 12 pieces.
