Lemon Curd Uses

On this cold wet January Saturday, the warm lemony flavor is what is sounding good. Upon leafing through my new Southern Living Magazine, it has a few pages with recipes using lemon curd. If you love Lemon, I suggest you run to then store and purchase SL for Feburary. It is just full on great exciting lemon recipes, ranging from lemon curd cheesecake to Lemon Souffles and more. It has suggestions of different ways to use lemon curd, which they give the recipe for, but if you are so inclined, you can buy lemon curd in a jar that is almost (almost, but not quite) as good as homemade. Cake Drizzle

Top warm gingerbread or toasted pound cake with schools of ice cream and lemon-curd. I also like it between layers of coconut cake.

Cloud Cake

Bake your fav white cake batter in a 13,9 in pan. Cool in pan and then pierce top of cake using the handle of a wooden spoon every 2″ or so. Spread 2 cups lemon curd over cake and cool completely, cover and chill 4 hours. Frost topo with sweetened whipped cream, notice I didn’t say Cool Whip.

Layer lemon curd, coarsely crushed meringue cookies, fresh berries and sweetened whipped cream in vintage parfait glasses

Grandson’s Imagination Leads to a New Blog

This past weekend, our kids from Phoenix came to visit since they had a holiday on Monday. Jaden, the 11 yr old came with a story he had written for school. That was our dinner entertainment one night, listening to his story, which was absolutely great. The imagination of this young man amazed us all and humor, well, let’s just say that we were all loving the laughter and smiles that the story brought. He wanted to know if he could post it on my blog, when I suggested that he form his own blog. That way, he could put the story or if he decided to make it a series, he would be able to post them whenever he wanted. Thus, http://www.myfictionallife.com was born……He ask me if I would post and share this new blog site and of course, being the cool, great grandmother I am, I am doing just that. Where did the years of Sesame Street and Pippa Pig go and when did Jaden get old enough to be able to write about a time machine which takes him back to Roman days, with gladiators; which is where the time machine took him. As I pondered this question, I thought to myself, “self, where does the time go such as when I didn’t need support bras or pantyhose, or “did I really live during a time when there was no QVC or microwave ovens?”The answer; time just goes. No one exactly how or  when it happens, but it does. The times that we think will be there forever, they go faster and faster. My point today is this…..write down special memories because even though you might think you will remember everything special, with that wonderful memory of yours, that also goes….trust me on this. So take note of special times that come along. Enjoy it when that 3 yr old grandson sleeps between you and lays his feet and legs over your face. Listen, really listen to the stories that your grandchildren  and children make up, (unless they are in their 30’s, then you might seriously think about getting help for them) it is just so incredible to listen to their imagination.  At our age, our imagination only involves thinking about a whole night sleeping without having to get up to go to the bathroom, or trying to imagine what I use to look like before I had to use 3 layers of makeup to cover up lines. On crazy days, I do imagine winning the grand prize on Wheel of Fortune, but that is only when I feel really bold and “out there”.

So if you are so inclined to “go wild” and show those grandkids they are not the only ones with an imagination, write a story about something crazy you did when you were their age, or get out pictures of the “younger years” and share memories with them. They might just surprise you and ask a question or two before running off to the computer or TV, well…..at least you can “imagine” them being interested……

Use one night a month for you and your spouse to sit and write down some dreams and talk about things that you both enjoyed before you had to be home to catch the 6:00 news. Randy and I make a special night each January to have special snacks and make a bucket list of things that we want to do in the new year. We do NOT, not EVER, list “get more exercise” or “eat healthier” as those don’t sound like fun, so we don’t list them, plus we know that the next year, we would not be able to check them off our list. So we plan day trips, or vacation places, or name something that we would like to begin. We are taking our Omega 3’s religiously so we will be able to remember the fun plans that we have made, but just in case we do forget, we have written them down….we don’t want our imaginations to get bored this year. We are determined to let 2013 be a year of at least completing half of our yearly bucket list. If we don’t make that goal, we will just change the yearly list to say 2014 and start over. After all, at our age, we will probably forget what or where our imaginations took us.

Sauteed Brussels Sprouts & Mushrooms With Crispy Prosciutto

Over the last 3 days I have been in such a baking mood. I have made 2 cakes, a big batch of chocolate/pistachio biscotti and a pecan pie. Over the holidays, the only dessert that I did not make, even though I couldn’t get the picture of it out of my head, was pecan pie. So I finally got a piece of homemade pecan pie. It was about 7 p.m. last night and because it was Fri night and we think that we cannot watch Shark Tank without sitting with a plate of a great dessert on our laps, I jumped up and knew that this was the night. I was not going to let another day go by without having my “once a year” piece of pecan pie. I don’t like it because of the pecans, in fact, I don’t put but about 1/2 cup of finely crushed pecans. I love it because of the gooey middle. I only put the small amount of pecans on it because I don’t want people to think that I’m crazy for saying I love pecan pie, when actually there would be no pecans in it. Last night was amazing….Shark Tank and pecan pie…..Randy reminded me that years ago, we described our nights as “amazing” because of something else, now it’s the dessert and fav tv shows that dictate how we rate the nights….Hum……well, maybe we will talk about that at another time. Now, for the recipe that I began to post. Pecan Pie is not my only love, I have come to truly appreciate and love Prosciutto..Because my oldest, Jason, taught me that fresh brussels sprouts were totally different than frozen ones, I use only the fresh now. This is a great accompaniment to any meat dish, or as a main dish with a salad and bread..

4 tables olive oil, divided

2 (3.5 oz) packages prosciutto, chopped

2 1/2 lbs fresh brussels sprouts, halved

2 (8 oz) packages baby portobello mushrooms

1/2 cup balsamic vinegar

1 tables minced garlic

1 tables sugar

1 teas onion powder

1 1/4 teas salt

1/2 teas pepper

In a large skillet, heat 2 tables olive oil over medium heat. Add prosciutto, cook for 12-14 min, stirring constantly, until browned and crispy. Remove from skillet and set aside, reserving drippings.

Increase heat to medium-high. To skillet, add remaining olive oil, sprouts, mushrooms, vinegar, garlic sugar, onion powder, salt and pepper. Cover and cook for 5 min. Remove cover and continue cooking for 10 min, stirring frequently. Stir in prosciutto. Serve hot.

Happiest Of New Years Blessings to You

We are home from Chicago, home of the best Italian food outside of Italy. We even stopped at one of our favorite places there, Carmines and brought dinner on the plane to have tonight. There is just something special about that town. Each time we go, I seem to love it more and more. Although always glad to be home, it is hard to leave Chicago.

We met some friends of ours from Richmond, VA there, as we have done many years for New Years. We seem to go to places that have gained a place in our hearts because of the nice memories, not to mention the great food. If you travel to Chicago, check out the smaller hotels there that have such a nice ambiance to them. It was so cold, with the wind chill, some nights when we were out walking, it was 7 degrees. So every once in a while, we would duck into a store or hotel to allow our cheeks to un-thaw so we could resume our conversations. When we entered the Hilton or Marriott, although they were both lovely hotels, there was just something that made us so glad we were staying where we were staying, The Millennium  Knickerbocker, which is located 1/2 block off the Magnificent Mile. When we would walk in, after being gone, they would call us by name and it just reminded us of what hotels must have been like years ago. The rooms are small, but so quaint. When Randy stubbed his toe on the chair that was right by the bed, I did have to remind him that was just the price you paid when you wanted “quaintness”. After all, what is a stubbed toe, when you have “quaintness?”

Some of the favorite restaurants that we always have to go to are, Garret’s Pop Corn,  Carmine’s ‘, Joe’s Stone Crab, and ” Pertillo’s. This year, we decided to get out of our comfort zone and try a few new places. One of those places was called Merlot on Maple. What a delightful restaurant!!! We entered the brownstone  house and was taken directly to our table, which was upstairs on the 3rd story. Because the rooms are small, there is only 3-4 tables in each room, which created such an intimate dinner, where you could actually have a conversation without yelling to be heard. (well, almost all of us, one of us who share remain nameless still needed a little help). The owner and cook is from Bologna, Italy and makes all her own pastas. The delicacies are flown in from different regions of Italy, such as black truffle oil and mushrooms. We began our dinner with prosciutto wrapped around some type of cheese I could not pronounce, much less remember or spell, which was wrapped around asparagus and then baked. Wow, just delicious. They brought baskets of what looked like fried lasagna noodles and was lightly sprinkled with garlic and sea salt. We finished off our diner with gelato, which she makes there, coconut and chocolate. All 4 of us felt like we had been right in the heart of Italy. After dinner, we put on our face masks that made us feel and look like bank robbers, and headed out into the night. I think one reason I love Chicago is the heavy coats you have to wear. No one knows if you are a size 8 or 18 when you have those things wrapped around you. So we can just eat and eat while there and hide the new found pounds in a coat.

Times like this past week, just prove once again, that friendships, not only are made and nurtured around the table, where food is shared, but the memories that are made are priceless. We just have to remember to take the time to sit and visit with one another. Even though it had been 5 years since we have seen these friends, it was like we had been with them every day the last 5 years. We rang out the old year, thankful for God’s blessings of so much He has given to us, new family members, new adventures, health,although losing a parent, which was very sad,  but knowing that he is enjoying his life, that is now free from pain and disabilities.

We began 2013, encouraged that we had been reminded on this trip that true friendships are everlasting.

But most of all, we begin 2013, encouraged by all of our family and friends and what a blessing each one  is to us. Happy New Year. I’m back home and will resume sharing new and great recipes…tomorrow. Right now, I’m going to sit and finish up the last of our Garrett’s carmel popcorn with a glass of Dr. Pepper.

Cinnamon Brownies

These brownies take a normal brownie to the next level. Took them to art class today and everyone loved them and wanted the recipe. When I told them to just make  your favorite brownies recipe (and yes, if you are like my husband, Frosty, who loves even the Duncan Hines box brownies) just add 1 1/2 cup cinnamon flavored chips to the batter. I buy the chips at Walmart and I used to see them at Tom Thumb at Christmastime. In years past, because they weren’t always available at other times of the year, I would buy a dozen or so packages and freeze them so I could have Cinnamon brownies whenever I wanted. They just add such a great flavor to the brownie. Then just sprinkle sugar over the brownies when they come out of the oven.

We are leaving to spend Christmas with some of our kids tomorrow so please have a wonderful and blessed Christmas. Remember, it is not what you cook that keeps family coming back, it is the love in which you serve the food  that keeps them wanting to come back. Friday ROAD TRIP of Christmas Countdown

Well this past week has found the Griswalds at Wallyworld, the Storage Unit and now ta da, we get to go to Big Bear, which is up in the mountains a couple of hours from our house for a Chocolate Tour. The tour takes you to 4 decorated houses with different chocolate treats at each place. Frosty and Noel will be in heaven. We have our Tums packed in our back pocket, our cell phones on silent and the GPS loaded with our destination. That just makes us sound so much cooler that “we have the map in the car”. Of course, where we are going, the GPS probably won’t work, so we do have our map tucked between the cooler filled with Energy drinks, Dr Peppers and chocolate covered pretzels, just to get us ready for our chocolate tour.

Will be so excited to return to tell you about the weekend. But have to tell you about our little experience last night. We had been invited to some friends house, (before I tell you this, don’t you really wonder how things like this always happen to us) for dinner. We had absolutely the best baked chicken I think I have ever had. She is giving me the recipe and will post it when she does. We finish dinner and she serves Pumpkin YumYums. Oh my, pumpkin layer over cream cheese layer over a buttery crust with whipped cream. To die for. Will post that when I get back also, but if you just have to make it this weekend, all it was was the 4 layer chocolate pudding dessert that people used to call Chocolate YumYums….but instead of the chocolate layer she mixed a can of pumpkin with 1-2 teas of pumpkin pie spice (depending on how much spice you like) with a small package of instant french vanilla pudding with the 1 1/2 cups cold milk. Beat the pumpkin with the pudding and spread over the cream cheese mixture which you make with 8 oz of cream cheese, 1 cup of powdered sugar and 1 cup of Cool Whip. Well, I have gone this far, I might as well give you the whole recipe. Whip up the cream cheese, sugar and Cool Whip and spread over cooled crust. The crust is made up of 1 1/2 cups flour, 1 stick of cold butter and 1 cup chopped pecans. Cut butter into flour and add chopped pecans. Spread over a 9×13 pan and bake until golden brown, about 12-14 minutes. Watch it closely. When it is cooled completely, spread CC mixture over crust. Pour pumpkin over CC layer and top with whipped cream. Put in fridge and let it sit for about 4 hours before serving. Now, back to my story.

We finished dinner and went into the den to watch a video. There were about 14 of us there. We were watching so intently (it was part of our Bible Study lesson) but I kept smelling something burning. I tried to get our hostess attention to tell her that I truly smelled something burning, but thought, well, she has the dishwasher on, I bet a plastic bowl is too near the heating element. But the smell kept getting stronger and stronger. All of a sudden one of the other guests turns around and yells, “the table is on fire”..The flames were shooting up about 4 feet into the air and we all ran for water and began to pour water on her table. So now not only does she have a burned dinning room table, but a soaked rug as well. But Frosty, being the Christmas Giver that he is with a most generous heart told her not to worry, he would buy her more candles to replace the ones that caused the fire..He is just the best!

The fire did not even dampen our night at all. We had a most enjoyable evening with precious friends and the most amazing dinner. Frosty was excited that he had got a home cooked meal, and he didn’t even have to buy the groceries. That always makes it taste better. Am headed to finish packing, will talk to you on Monday with new Christmas recipes and maybe a funny story or two. After all, when we drive to the mountains for the weekend, you know some story will come out of it.

Tips for Baking Cookies

Yesterday a friend emailed me and said that a lady had brought in ginger cookies to the office. They were thin and crispy  and she wanted to know why they had spread out so much. Here was my answer.

1. Almost always, the cheaper the butter the more water content. Never use whipped butter or margarine, way too much water content.

2. If you like a “fluffier” cookie to that of a thin crispy cookie, use half butter and half shortening in the recipe.

3. In making chocolate chip cookies from the recipe on the back of the Nestles Semi Sweet CC’s it calls for 2 eggs, I only use 1. If recipe calls for Large Eggs, and you have Extra Large, use only half of the eggs called for in the recipe.

4. Using parchment paper seems to help the dough not spread out so much.

5. Measuring the flour is really important. I never sift the flour. I stir the flour in the canister before I dip the measuring cup into the flour. I do not pack it in. I just dip the measuring cup in the flour and then level it off at the top.

If you like them soft, be sure to begin to watch the cookies in the last 2-3 minutes of baking time. Because all ovens are different, yours might be done in 9 min as opposed to 11. If the cookie just barely creases when you poke your finger in it, that is usually when I take them out. I am assured that they will stay soft that way. I also don’t use cooling racks. I put the hot cookie straight from the cookie sheet to the paper towel that I have placed on the counter. Soaks up some of the grease and seems to keep them softer than the cooling rack.

2ND Annual Griswalds Storage Unit & WallMart Trip

We haven’t figured out yet why these things always seem to happen to us. I remember Erma Bombeck saying that she felt that God allowed the circumstances in her life so she would write about them and give people the gift of laughter. Maybe that is why these things happen to us. All I know is that if Candid Camera were still being filmed today, Frosty and I would probably be the stars of the show, as we just seem to attract “situations”.

It all began Saturday morning, when, “with visions of sugarplums danced in our heads,”  we set out to storage with our sleigh to pick up our Christmas decorations. After Frosty dropped the first box of “treasures”, and us scrambling around trying to salvage the unbroken nativities and the shattered ornaments,we decided that maybe a flat bed dolly would be good to use. So, in a few minutes, he comes back with a dolly.

We loaded up about 15 boxes on the dolly and we proceed downstairs to the car to load up the first haul. So far so good, (except the boxed “we” dropped). Frosty opens the back gate to start loading the SUV and I go around to the side to put both seats down so we have more room to pack  boxes. When I cannot get the seat to budge, I ask him to come around to help me put the seat down. He does….in doing so, he left the dolly, still filled with the boxes at the back of the car. I happen to look up to see the dolly rolling down the parking lot, still filled with the boxes, headed straight for a “Rent Me for $19/day” van. I take off running and then grab the handle to stop the roll away cart, finally stop it just before it crashed into the van. Frosty said he had never seen me move so fast. I give him a dirty look and proceed to load boxes. We take the dolly upstairs to the storage unit. The hallway is dark. He tells me that the lights are motion detected and I will have to walk to the other end of the hallway to activate the light. I do so, but by the time I walk all the way back, we only have about 5 min before the lights go out again. So another trip back down the hall. I am not singing Christmas Carols by this time. After 3 trips down the hallway to get the lights to come on, we get another load of “treasures” and head to the car.

After we finally get the tree loaded in the back of the car (this is now our 3rd trip back to the storage unit) I told Frosty that instead of bringing the other 15 boxes of Christmas decorations, let’s keep this year simple and just use green and red balls on the big tree. It is then that he reminds me that if we are truly going to keep it simple, we wouldn’t have made 3 trips to the storage unit. But off to WallMart to buy green and red balls for the tree. We enter a crowded store and head to the seasonal section where we find just what we are looking, containers of green and red Christmas balls. 50 green per container and 50 red per container. I pick up just the perfect container and the bottom falls out. Balls are rolling all over the isle with people having to back up their carts because they cannot go down the isle without running over the balls. Randy quickly runs around the corner pretending not to know me. That poor sweet clerk who came to help pick them up. I don’t think he was wishing me a merry Christmas. But off we go to check out. On the way out of the store, Mr. Randy is busy laughing at my fiasco with the ornaments and doesn’t realize that each person going out of the door is being stopped by a “friendly Wallmart Clerk” to check receipts. I was ever so thankful that it wasn’t the same clerk who cleaned up the isle after me a few minutes before. We are trying to hurry out of the store before we can damage anything else when Randy completely runs our cart into the “backsides” of the couple in front of us. Well…I guess I don’t have to tell you the looks we got from them. By this time, we were afraid to go anywhere else. We headed home to begin making our little abode into Frosty and Noel’s Gingerbread house. We both knew that we had had enough fun for one day. It is now truly beginning to “look a lot like Christmas” but we hope that by next weekend, we will have recuperated from loading and unloading boxes to just enjoy our new Christmas decorations. After all, “keeping it simple” is our new Christmas Season motto!

Countdown to Christmas

Hope you have noticed the new look to the blog. When my son was here for Thanksgiving, he helped me to put a new look to the homepage. I am so grateful to his computer knowledge, while I do good to just write on the blog. Thanks, Jason, I love the look and the pictures of the desserts, just makes me want to get in the kitchen and bake.

It is now 4 weeks from today until that magical morning when, if we have small children, we awake to shrills of laughter and delight. If we are in the season of life that allows us to actually sleep past 8 because the children are either older or gone out of the house, we awaken to just the opportunity to sit beside the Christmas tree and remember special years of the family gathering around the tree. Isn’t it odd, when we have the children under our roof, they wake us up at 5:30 a.m because they cannot wait a minute longer to see what Santa has brought. We think, “oh how nice it will be when they are older and we can sleep in past 8 on Christmas morning sitting by the tree with a cup of coffee all the while listening to carols on the “iPod” (notice I didn’t want to sound too old and say “radio”)”.

Then, when they are teenagers, we have to threaten them with”you will have your iPod, computer and iPhone taken away, unless you get out of bed right now so we can have Christmas morning”.

Then the season of  wishing that they would grow up just a little more to where they will “appreciate all we are doing to make their Christmas special” Why, do they not realize that I shopped and shopped just trying to pick out the perfect present” only to find out since it was purchased, there is already a “new and improved” version.

Then the years come that we are empty nesters. We are now able to sleep in until 8, but because we go to bed so early now, we awake on our own at 6:00 a.m. As we head to the living room to turn on the lights to the tree and Christmas music. it still doesn’t make the longing of wanting a full house again,  go away. The longing for just one more year that we could have little ones back in the bedrooms, waking us up at 5. Or maybe just one more year of teenagers, sleeping so soundly that we have to turn up “Santa Got Run Over By a Reindeer” just to irritate them out of bed. That was always one of my most favorite ways to irritate them. Oh for the good times.

This year, I am learning to be content in whatever season of life I am in. Yes, I will sit by the tree and reminisce about Christmases’ past. I will give thanks to God for the years when we did have to stay up until midnight to put together trikes, or desks or train sets. The years of trying to get them all to sit down together for Christmas breakfast before they took off in their own cars to go show off their new clothes to friends will be remembered. But it is also very nice to sit with my husband, listening to”O Holy Night” while we enjoy the quiet of Christmas. We will give thanks for all the wonderful memories of children, teenagers and our parents being crowded into our house. When we have had enough quiet, we will quickly get ready to join our adult children at their house. It is now time to pass the baton to them to begin their traditions and memories of Christmas in their own homes.  We are adjusting quickly to the “passing the baton”. After all, we now, for the first time in years, are truly in control. We can leave whenever we want and head home to the quietness of Christmas as seen only through the eyes of grandparents.

The memories of Christmas past are absolutely wonderful but the new memories that will be made, maybe in a different way, are just as priceless. And because we can approach Christmas morning after having a great nights sleep, while visions of sugarplums danced in our heads, we will be so excited as the little ones jump up to greet us, with the sparkle of Christmas in their eyes.

So Christmas Countdown begins with renewed hope, renewed excitement and renewed love for our precious family who we love so much. Let the celebration begin! Noel and Frosty,

PS…that is now how we irritate our children, we change our names the day after Thanksgiving until Christmas, even on our phone answering machines and everything we sign (except the checks we send to them, we tried that, but the bank sent them back and the kids threatened to send us early to the nursing home if we did it again)

Post Thanksgiving Blues

It’s almost here, the hour that both cars will pull out of the driveway and head home. Back to reality. Back to cooking for two. Back to having no toys to step over, no dishes in the sink, after I have cleaned up 14 times since lunch. No background Little Einstiens, no sharing my iPad, well, actually we didn’t share, I haven’t seen my iPad since last Monday. No Pop Tart crumbs to vacumn up. No cookie crumbs in our bed because all the little darlings wanted to lay in our bed and watch cartoons. Wait, why am  I getting depressed? Because with all of that, comes the cutest little voices telling me that “dats otay, Nana, I fine” when one of the other kids ate the last chocolate chip muffin. Or, “Nana, I wuv you so much” or, “I wish I could just stay here”. All those precious words are what make all the afore mentioned things worthwhile. So even though it will be nice to not have to “share” the iPad, or only cook for 2, the day after they pull away to head home will be the day that we begin to plan our trip to visit them in 4 weeks for Christmas. After all, the Thanksgiving blues would turn into a Blue, Blue Christmas without them. We love you guys and are so thankful that you were here this year and helped make new memories that will stay with us forever, especially the pen marks on the couch, the sticky gum that won’t come out of the carpet, the broken expensive pumpkin that won’t sit in the middle of the table anymore…..Oops, sorry, guess I did have  a little more Holiday Stress than I  thought. Well, we truly are thankful for each and every memory we have for Thanksgivine 2012, good and bad. Our family has come to accept the fact that our holidays relate more to Clark Griswald than to Norman Rockwell. We are signing off from Peter and Penelope Pumpkin to Frosty and Noel as of today…..The Christmas Countdown begins now!
