Chicken and Artichoke Penne

Looking for some new summer recipes, this one jumped off the page from my new Southern Living that arrived a couple of days ago.

1 1/4 teas kosher salt, divided

1/2 lb penne pasta

1 lb chicken breast tenders

1 1/4 teas black pepper, divided

3 tables olive oil

1 pint cherry tomatoes

1 (9 oz) package frozen artichoke hearts, thawed

1 ( 6 oz) package fresh baby spinach

1 cup freshly grated Parmesan cheese

Bring 4 qt water to a boil in a stockpot over high heat. Add 1 teas salt; return to a boil. Add pasta; boil, stirring occasionally 11 minutes or until al dente. Drain, reserving 1 cup pasta water.

Sprinkle chicken with 1 teas each salt and pepper. Cook chicken in hot oil in a large skillet over medium-high heat 4 to 5 min on each side until golden on each side. Remove chicken from skillet. Add tomatoes to skillet; cook, stirring often 4 minutes. Stir in artichokes, 1/4 teas salt and pepper. Add 1/2 cup pasta water. Reduce heat to medium and cook stirring often 3 minutes or until tomatoes burst.

Stir pasta, spinach and 1/4 cup cheese into tomato mixture; toss with pasta mixture. Top with remaining cheese.

Bacon-Cheese Stuffed Shells

From the Thanksgiving Issue of Taste of Home, this recipe “called” to me when I saw that most of the ingredients were different types of cheese. A great dish for company.

24 uncooked jumbo pasta shells

1 cup chopped fresh mushrooms

1 cup finely chopped onion

1 tables, puls 1/4 cup butter, divided

1 1/2 cups ricotta cheese

1 package (8 oz) cream cheese, softened, divided

1 1/2 cups shredded Asiago cheese, divided

1 cup shredded Parmesan cheese

1 cup crumbled cooked bacom

2 tables minced fresh parsley, divided

1 teas garlic powder or fresh minced garlic

1/2 teas ground nutmeg

1/2 teas black pepper

2 tables flour

2 cups heavy whipping cream

1/2 cup chicken broth

1/2 cup milk

2 cups shredded Romano cheese

1 1/2 cups shredded mozzarella cheese

Cook pasta according to directions on package. Drain and set aside. Meanwhile, in a large skillet, sauté mushrooms and onion in 1 table butter. until tender.

in large bowl, beat ricotta and 4 oz cream cheese until blended. Stir in 1/2 cup Asiago cheese, Parmesan cheese, bacon, 1 table parsley, garlic, pepper, nutmeg and mushroom mixture. Spoon into shells, and then place shells in a greased 13×9″ baking dish.

In a large saucepan, melt remaining butter. Stir in flour and stir until smooth. Gradually add the cream, broth and milk. Heat until mixture begins to boil and stir for 1-2 minutes.

Stir in Romano cheese and the remaining cream cheese, Asiago and parsley. Pour over shells. Sprinkle with mozzarella cheese. Cover and bake at 350 for 30 minutes. Uncover and bake 10-15 minutes longer or until mixture bubbles.

P.S. You can always leave the bacon out or substitute 1 cup chopped cooked chicken.

Quick Pasta Carbonara

Using the new Philadelphia Cooking Crème, this pasta dish is really quick and really great for those nights when you are wanting comfort food without taking lots of time, but want great flavor.

Cook 1 lb of pasta (your choice) as directed on package, omitting the salt. Meanwhile, cut 8 slices of Oscar Mayer Center Cut Bacon into 1/2″ pieces; cook in a large skillet until crisp.

Transfer bacon to paper towels to drain, but reserving 3 tables drippings in the skillet. Add 4 minced garlic cloves to drippings; cook 1 minute. Add bacon, 1/2 teas pepper and 1 1/3 tubs (10 oz ea) Philadelphia Italian Herb Cooking Crème; cook and stir 3 minutes. Drain pasta reserving 1 cup cooking water. Gradually stir reserved water into sauce. Add pasta an 1/2 cup Kraft Parmesan Cheese; toss to coat. Transfer to bowl; top with additional 1/4 cup parmesan and 2 tables chopped fresh parsley. Makes 8 servings.
