Butterfinger Lush

Last night we were invited to some friends who live across the street from us to play cards. Patti had just returned from Texas and while there she ate this amazing dessert at their kids house. She made it for us last night and oh my gosh, it was some of the best dessert I have ever had. You need to believe me when I say that this layered dessert is a winner. Thanks Patti for sharing it with us last night and then sharing the recipe today. Wasn’t even mad that you beat me at cards after having some of this great dish.

Ingredients:
32 Oreo cookies (finely crushed)
5 tables butter, melted
1 (8 oz) package cream cheese, softened
1 cup powdered sugar
3/4 cup creamy peanut butter
1 bag mini Butterfingers
1 (16 oz) container Cool Whip, thawed and divided
1 (5.9 oz) box instant chocolate pudding mix
2 cups cold milk

1. In a medium bowl, stir together crushed Oreo cookies and butter. Press firmly all along the bottom of a 9×13 baking dish. Place in fridge.
2. Using electric mixer, beat softened cream cheese. Gradually add the powdered sugar. Beat in peanut butter. Fold in 1 cup of the Cool Whip. Crush 6 Mini Butterfingers and fold them into the peanut butter mixture.
3. Spread peanut butter mixture evenly over the Oreo crust.
4. In medium bowl, whisk the pudding mix and cold milk together until thickened. Let sit to thicken for a minute or two and then pour over peanut butter mixture.
5.Spread remaining Cool Whip on top. Crusty remaining Butterfingers and sprinkle over top. Place in fridge until ready to serve.

Old Fashioned Banana Pudding with a Twist (actually several twists)

This weekend we were invited to a dinner party, where I had volunteered to bring the dessert. It has come to my attention that we aren’t that well liked, they just invite us so I will bring the dessert, as folks know that I love to bake and use any opportunity for a reason to do so. Also, Jodi had invited some of their friends over on Saturday night and of course, and I had volunteered to make her dessert for her gathering as well. When given her choice of what she wanted me to make she choose banana pudding. Being that that is not one of my favorite desserts with the vanilla wafers, I quickly remembered Paula Deens banana pudding which steps up traditional banana pudding about 10 notches. That was my deciding factor, remembering standing in our kitchen, licking the bowl of Paula Deens banana pudding several years back. She uses Pepperidge Farm Chessman cookies instead of vanilla wafers and adds several ingredients making this a most richly flavored dessert. By the time I got to the store, I decided to just make a double batch, one for the Duprees and one to take to our dinner party. Walking through the grocery store I started thinking about the chessman cookies and decided that I would use a crust that is so easy and yet so delicious instead of the Chessman cookies! It is the crust which is used for Texas Panhandler Yum Yum’s. Now, it was all coming together. That would be the crust, and Paula Deens filling for the pudding. All that to say…….here is the version that was made and devoured Saturday night.
When Jodi called this morning she told me that her company ask what the crust was because it was just delicious. Trust me on this, you will love the combination of the flavors and the ease of which it is made.

Preheat oven to 350.
Crust

1 1/2 cups flour
1/2 cup finely chopped pecans or walnuts
1/2 cup butter

Melt butter in microwave safe bowl. When completely melted, add the flour and the nuts. Stir to combine and place in either a 9×13 or a 11×7″ pan. If using the 11×7, the crust of course will be a little thicker. I was making it for 6, so I used that size. I made Jodi’s in 9×13 because she was serving 9. Either works fine.
Spread crust ingredients in pan using your fingers until dough is spread evenly in pan and bake in preheated oven for about 12-15 minutes or until golden brown. IF using the 9×13 it won’t take as long to bake. Cool crust completely. Set aside.

Filling
2-3 bananas
1 (3 oz) package of french vanilla instant pudding *see below
1 (3 oz) package of white chocolate instant pudding
1 (8 oz) softened cream cheese)
1 can of Sweetened Condensed Milk (Eagle Brand)
1 (8 oz) container Cool Whip, thawed

Topping * See Below
1 1/2 cups cold heavy whipping cream
1/2 cup powdered sugar

Whip softened cream cheese with the Eagle Brand milk until well combined. Add the Cool Whip and beat just until well mixed. Set aside in fridge while making pudding.

Beat both packages with 3 cups of cold milk until thick. (recipe on box will say use 2 cups for each box, but do not do this, just use the 3 cups for the 2 boxes combined) When thickened, add to the cream cheese mixture and mix thoroughly. Slice 2-3 banana over cooled crust. Spoon pudding mixture over the sliced bananas. Place in fridge, covered with plastic wrap.

Whipped topping

It is very important to use a very clean, grease free bowl to whip cream. any grease will cause the whipping cream not to thicken. Using 1 1/2 cups very cold heavy whipping cream, add 1/2 cup powdered sugar and whip until whipping cream is thick and holds its shape, about 3-4 minutes. Spoon over chilled pudding mixture and keep covered in fridge until ready to serve.
Cut into squares and serve with more sliced bananas on top if desired.

*I use French vanilla instead of the banana instant pudding, just because I don’t like so much banana flavor. But you can use banana instant pudding if you like a more banana flavor.
*if you don’t like or want to use whipped cream for topping buy an extra Cool Whip and use instead.

Ice Cream Cake

IMG_5829August…ice cream month! So to celebrate that special time, I made an ice cream cake for bunco tonight. It is so simple, yet so flavorful and yummy! Layers of Klondike bars, intermingled with caramel, hot fudge, and Cool Whip.

4 packages of Klondike bars, (the flavors are up to you, but I use the double chocolate and original ones)

1 pint of cookie dough ice cream (or another flavor if you prefer)

1 (16 oz) container of Cool Whip

1 (8 oz) container of Cool Whip

Jar of Hot fudge
jar or salted Caramel

4 sugar cones, broken up into pieces

Maraschino Cherries for topping

Using a deep dish 9×13″ casserole, unwrap 6 Klondike Bars and place them in bottom of dish. Either cut up about 2 more Klondike bars or fill in with some of the pint of cookie dough ice cream to fill in spaces. Microwave (took about 20 seconds) the caramel sauce until you can Drizzle caramel sauce over this layer of ice cream. Cover with the 8 oz of Cool Whip. You will then need a little of the 12 oz container of Cool Whip to completely cover the bars. Then place more of the Klondike Bars to make a second layer. Fill in with cut up Klondike bars or more of the pint of ice cream. Microwave (about 15-20 seconds) the hot fudge until you can drizzle it over the ice cream bars.Finish filling in any empty spots with the cut up Klondike bars or the rest of the pint of ice cream so that you have no empty spaces left. Cover with the rest of the Cool Whip. Top the Cool Whip with drizzling more of the caramel and hot fudge. Crush up 3-4 sugar cones and spread over the top of cake and then top this with maraschino cherries! Cover and freeze until needed. You might want to take the cake out of the freezer about 10 minutes before serving to soften it a bit before cutting.
Makes 12-15 pieces.

Chocolate Cookie Pudding

Being at our daughter’s house last week, I began to look for simple desserts since my son-in-law had informed me before I got there that I was expected to make at least 3 of them while there. This one caught my eye since it would be simple, not many food items to purchase and even the 3 year old would love it. To change it up, feel free to change out the Oreo cookies for Double Delight Oreo Peanut Butter & Chocolate cookies.
1 (5.9 oz) package chocolate instant pudding mix
2 cups milk
1 (3 oz) package cream cheese, softened
1 (8 oz) container Cool Whip
16 double stuffed cream-filled chocolate Oreo cookies, crushed (about 2 cups)
1/4 cup chopped pecans (optional)
Whisk together the chocolate instant pudding mix and 2 cups milk for 2 mins. Cover pudding and chill 5 min.
Stir together cream cheese and Cool Whip; blend well.
Place 1 cup crushed cookies in an 8 cup bowl. Spread half of cream cheese mixture over crushed cookies; sprinkle with half of pecans if using. Spread all of the pudding evenly over top; spread remaining cream cheese mixture evenly over pudding. Sprinkle with remaining cookies and pecans. Chill for about 2-4 hours until ready to serve.

Ding Dong Delicious Chocolate Cake

For Jaden’s birthday cake, he wants an ice cream cake. He wants me to make it so have been looking for something other than just the regular one. When Jaden saw this one on my FB page, he said, “this is the one”. It consists of filling, cake layers and frosted with chocolate frosting and whipping cream. Since he wanted an ice cream cake, am adding frozen chocolate ice cream to the middle of the cake. Here we go…

Cake:

Make one Duncan Hines Chocolate Cake according to directions for two 9″ round cake pans. When cake is done, cool awhile and then slice each layer in 2 layers, giving you now 4 layers. Set aside.

Freeze about 2 cups of slightly softened chocolate ice cream (or flavor or your choice) in a 9″ round cake pan that you have placed Saran Wrap to extend over the edges. This will make it easy to pull it out after the ice cream freezes. This also ensures that it will be exactly the same size as the cake.

Filling:

1 stick softened butter, unsalted

1 8 oz softened cream cheese

1 8 oz Cool Whip

Mix until smooth. Place one cake layer on a serving platter that will fit into your freezer. Put about 1 cup of the filling and spread, just until the edge of the cake layer. Place a second cake layer on top. Using the frozen ice cream layer, place on top of cake layer. Place a third cake layer on top of ice cream. Use another 1 cup of filling. Place last cake layer on top and place in freezer for at least 1 hour.

Frosting:

This is your choice, you can either use chocolate frosting, softened ice cream or whipping cream. Cake will need to be frozen until serving time.

Pumpkin Fruit Dip

Peter Pumpkin and Penelope were in charge of treats at church today. Knowing that I wanted to take a tray of green/red sliced apples on a platter around a bowl of fruit dip, I went in search of a new dip. When I came across this one, I decided that it was the one that would sit in the middle of the apples. This one  sounded intriguing, combining a can of pumpkin puree with just a couple of other ingredients. The crowd went wild…I saw several of the hubbies going back and getting a huge spoonful on their plates, several even came up to me and ask me what was in it. Simple put, it was a success. It looked so pretty, with it’s light creamy pumpkin color, very complimentary to the apples which surrounded it. I think you will agree, this one makes a great Fall dip. As I was sitting in class, watching several going back to get more, my mind started racing. If the dip was this good with sliced apples, what else would it go with? I began to imagine it spread between thin slices of pumpkin bread, making pretty tea sandwiches. Or between sliced date-nut bread. Celery stuffed with it or stuffed dates. The possibilities are endless. But before I really get carried away, I think I will just post the recipe and let you come up with how you would like to use it.

1 (15 oz) can pumpkin puree

1 (16 oz) container Cool Whip

1 package (3 oz size) of French vanilla instant pudding

8 oz softened cream cheese

1/4 cup light brown sugar

1 teas pumpkin pie spice

Mix all ingredient, except Cool Whip together. After ingredients are well bended, add the Cool Whip and stir just until it is well blended with other ingredients; keep covered in the refrigerator at least 8 hours or overnight to allow flavors to blend.

Frozen German Sweet Chocolate Pie

Prep for this amazing pie is only 20 minutes, plus freezing time.

1 pkg (4 oz) Bakers German Sweet Chocolate

1/3 cup milk, divided

4 oz Philadelphia Cream Cheese, softened

2 tables sugar

2 cups thawed Cool Whip or real whipped cream

1 graham cracker crust or chocolate cookie crust

Microwave chocolate and 2 tables milk *(I like to use either evaporated milk or whipping cream to give it a more creamy flavor) and cook for 2 minutes. Stop after the first minute to stir and return to microwave and cook for another min., maybe 2 more minutes. Stirring between the minutes to stir and chocolate is completely melted.

Add cream cheese, sugar and remaining milk; beat with mixer until well blended. Refrigerate for 10 min. Stir in Cool Whip or 2 cups of already whipped cream; spoon into crust.

Freeze 4 hours or until firm. Let stand at room temp 15 min before cutting to serve.

Strawberry Pretzel Salad

Celebrity Resturant in Dallas drew in hundreds of ladies each day with this salad, which was served alongside chicken salad sandwiches.  With Mothers Day in 4 days, what better way to celebrate Mom, ( oh my, that’s me, I think I will make me a strawberry pretzel salad) with a delicious salad that is good enough to have for dessert. 

2 cups thin pretzel sticks, coarsely crushed

3/4 cup butter, melted

3/4 plus 2 tables sugar, divided

1 (8 0z) package cream cheese, softened

1 (8 oz) tub of Cool Whip, thawed

2 1/2 cups cold water, divided

1 (6 oz) package strawberry jello (not sugar free)

2 cups frozen sliced strawberries, thawed and drained well

Preheat oven to 350.

Spread pretzels evenly in the bottom of a 9×13″ baking dish. In a small bowl, combine butter and 2 tables sugar and pour evenly over pretzels; bake for 10 minutes.

Remove from oven and allow pretzels to cool to room temp.

In a medium bowl, beat cream cheese, whipped topping and remaining 3/4 cup sugar at medium speed with mixer until smooth. Spread cream cheese mixture evenly over pretzels.

In a medium saucepan, bring 2 cups cold water to a boil over medium-high heat. Add strawberry gelatin, stirring until completely dissolved. Remove from heat; add remaining 1/2 cup cold water and sliced strawberries. Let cool. Pour over cream cheese mixture. Chill overnight, covered. Cut into squares to serve and garnish with whipping cream and fresh strawberries.
