Chocolate Fudge Pie

Today, another rainy beginning to this new normal of everyone working from home and kids being home schooled as well as parents trying to teach, and learn right along with them, while still trying to do what is necessary to bring in a pay check. These are difficult days, and challenging times when we all have to step up and change what we have been doing. What do we do to still serve when so many are confined to their homes? This week, when we began to hear about seniors being ask to self quarantine, I began to think of ways that I could help serve them.  What should be my part in stepping out of my comfort zone to share God’s love by meeting the needs of those who are seniors? As I was sharing these thoughts with Randy the other night, he watched me and listened to what I had to say. Then without a moments hesitation, the minute I ask him what he thought I should do, he smiled at me and said, “uh do you realize that in a couple of months you will be 70 and you are suppose to be one of those who are to self quarantine for awhile?” WHAT……but, wait a minute. That thought never crossed my mind that I am considered old. When did that happen? Quickly I responded to him, that because I eat garlic almost everyday and enough chocolate to ward off most bacterias, I should be able to hang a garlic bulb around my neck and get out there among the true old folks. Why I’m still young because I  still wear cute little blingy sandals and capris (even though these cute little capris might have elastic waistbands) and wear loop earrings that could easily be mistaken for “tapers”. And….I teach other people how to use their phones. So truly, I can’t be considered someone who needs to stay at home…? But because so many stores and restaurants are closed down, I haven been forced to spend more time at home than normal. It is allowing me time to work on another book, which will be called Tis So Sweet and is full of dessert recipes and stories of women who are willing to share how God has been faithful in difficult circumstances in their lives. Also, I have been baking a little more than normal, which means that instead of making a dessert each day, I’m now making two or three. It is fun to share food with others. Last night I made up a recipe that actually turned out really good. Was so easy and simple and I had everything on hand so no trip to the store was necessary. It was a baked chocolate fudge pie that we ate watching a really good movie on Netflix.  That is Randy’s job each night. To find us a good movie that is fun to watch and family friendly so that we can recommend to others without fear of it being full of foul language or sexual content. So far, he is batting a thousand. Two for two. Tues night we watched Faith, Hope and Love and last night we enjoyed a little french film called French Toast.  Darling movie. Here is the easy peasy recipe for a great chocolate fudge pie for you to up your immune system…at least that is what I tell myself when I am cutting a big piece and topping it with whipped cream.

1 bought chocolate oreo cookie crust

1 bar (4 oz) of semi sweet baking squres

1 stick (8 oz) unsalted butter

1 teas vanilla

1 can (12 oz) evaporated milk

2 eggs

1 1/2 cups sugar

1/3 cup flour

1/2 cup finely chopped pecans

1/2 cup sweetened flaked coconut

Melt the chocolate with the butter over low heat. When butter and chocolate are melted, remove from heat and stir in the can of milk. Set aside. In a medium bowl, stir the sugar, eggs, and flour together until smooth. Add the cooled chocolate and vanilla. Stir in the pecans and coconut and pour into the pie shell. The pie shell won’t hold all of this. With the left over mixture, I placed two chocolate chip cookies in the bottom of a small loaf pan and poured the rest of the mixture over them and baked them right along with the pie.  Bake in preheated 350 oven until knife inserted comes out clean. Cool and top with whipped cream.

Keep covered in fridge. Was even better the second night.

Chocolate Almond Pie

Several years ago, I posted this pie after making it and realizing that it would become a favorite of our family. My oldest son, Jason, isn’t much of a dessert person. He likes two things, Texas sheet cake and this almond pie. It is a great pie to make and keep in the freezer for when friends or family drop by. It is very simple but very rich. I made it last night for dinner with friends this evening. They have never tasted its before so will be fun to see their reaction.

Ingredients:
1 chocolate cookie pie shell
15 regular sized marshmallows
6 regular sized Hershey Bars with almond extract

1/2 whole milk or Half & half
1 teas almond extract
2 & 1/2 cups whipping cream (divided)

In heavy saucepan, melt the candy bars with the 1/2 cup milk or 1/2&1/2 and marshmallows until all are melted and combined. Add the almond extract and stir until mixed in. Set aside to cool for about an hour.

After mixture is cool, whip one cup of the whipping cream until stiff peaks form and hold well and then add the cooled chocolate mixture and stir in altogether. Pour into the chocolate crust. Let sit at least 4 hours or you can cover the pie with Press & Seal and freeze until ready to serve.

Before serving, allow pie to sit in fridge for at least 4-6 hours. (If pie has been frozen, this will allow it to thaw enough to serve)

Whip the remaining 1 cup of whipping cream with 1/3 cup powdered sugar until stiff peaks form. Top the chocolate pie with whipping cream and serve.

Makes 6-8 servings.

Lemons & Lattes

I just had to post about the lemon meringue pie that I just had to have last night at 7:30 p.m. We were watching AGT and I looked over at Randy as the first commercial hit and said, “oh my gosh, we don’t have any dessert in the house except a frozen package of little cheesecakes and that is not what I am craving.” His response to me was, “well, what do you feel like making?” After a few minutes of different images of desserts swirling thought my mind, the only thing that sounded good to me was a lemon meringue pie. So at 7:40 p.m. I pulled myself up and headed for the kitchen. First thought, did I even have a package of cook and serve Lemon pudding? Second thought, did I really want to start this at 7:40? But when I crave a certain dessert, what am I suppose to do? Was dancing a jig that I had one box of the cook and serve pudding. This is FYI…about a year ago when we were in California visiting friends, we had a lemon meringue pie served as dessert. When I ask our hostess about her recipe she told me that for years, every time she makes a LM pie, people comment about her pie and ask her for the recipe. She always just said it was a family secret. In truth, she uses the Jello Brand recipe on the side of the box of Cook & Serve Lemon Pudding. The next grocery store visit I stocked up on said product. That was about a year ago and still to this day, that is the recipe I use except that on the side of the box the recipe for the meringue calls for 3 egg whites. So instead of using just two egg yolks that the box recipe calls for, I just add that 3rd egg yolk into the saucepan. After all, that just adds a little extra richness.
By 9:00 p.m., we were turning on Netflix to Call the Midwife (which we both hight recommend) and having a wonderful slice of lemon meringue pie.

It us unusual for me to not bake something pumpkin or apple when the tempts drop below 110, but all that would do last night was this wonderful pie, which made me crave a pumpkin spice latte. So today, we will stop at Starbucks for our first Pumpkin Spice Latte of the season…..and come home for another slice of pie!

Banana Caramel Cheesecake Pie

Paula Deen has just hit a home run with me. Just received my new PD magazine and every page is filled with either recipes for fried green tomato recipes, which included a BLT with the FGT or amazing summer ice box pies. If she had not been my favorite cook, she would be now. Every one of the recipes in this magazine are summer perfect! .It just makes me want to head out to the closet Farmer’s Market buy fresh corn (yes, this month she had fabulous recipes with fresh corn also), berries, green tomatoes and whipped cream by the gallon! The ice box pie I’m posting today sounds like it will become a favorite of mine. Thank you Paula for these wonderful summer recipes which should truly assure me that I won’t be fitting in my bathing suit for quite some time. But oh my goodness, the reruns on TV will be so much better with a piece of this luscious pie in front of me.

Banana Caramel Cheesecake Pie

1 (8.8 oz) package BiscottCookies, crushed

6 tables unsalted butter, melted

1/4 cup sugar

1/8 teas salt

1 1/2 (8 oz) packages (so 12 ounces in all) of cream cheese, softened

1 3/4 cups powdered sugar

1 teas vanilla

1/2 cup heavy whipping cream

1/3 cup sour cream

1 cup sliced banana

1/2 cup caramel topping

Garnish: sliced bananas

Preheat oven to 350. Spray a 9″ deep dish pie plate with cooking spray.

In a medium bowl, stir together cookie crumbs, butter and granulated sugar and salt. Press mixture into bottom and up sides of prepared pan.

Bake until lightly browned, about 10 minutes. Let cool completely.

In a medium bowl, beat cream cheese, powdered sugar and vanilla with a mixer at medium speed until smooth. Add cream and sour cream and beat until very thick, about 3 minutes. Stir in sliced banana. Spread into crust.  Dollop caramel sauce onto pie and gently swirl together, being careful not to disturb the bottom crust. Freeze until firm, about 4 hours. Garnish with more banana slices if desired. Serve immediately.  Thanks, Paula, this one is a keeper!

Spring & Summer Peach Pie

IMG_4568A new friend who is my neighbor brought me this recipe. Her grandmother use to make it and she said it is just delicious and perfect for those spring and summer luncheons or just dessert when you are sitting out on the front porch enjoying the summer breeze. As soon as I read the recipe, I ran (well, actually I drove) to the store and bought peaches and orange jello and it is now sitting in my fridge, just waiting to be sliced onto a plate for our enjoyment. Seeing it sit there this afternoon, I couldn’t stand it, so I took a spoon and went in for the taste. It is so refreshing and so light, it is just a great recipe to cool you down after a barbecue or heavy dinner. Thanks so much Patti for sharing it. Think Dreamcicle! in a pie!

Crust:

Combine 1 cup flour

1 stick (1/2 cup) cold butter

1/4 cup light brown sugar

1/2 cup chopped pecans

Combine the ingredients, except the pecans and cut with pastry cutter until butter is like small peas and well incorporated in with the flour and brown sugar. Then add the pecans.

Pat into a 9×13 baking dish and bake in a preheated 400 oven for about 12-15 minutes or until crust is a light golden color. Remove from oven and crumble with fork. Reserve 1/2 cup of the crumbs and pat remaining crumbled mixture into a 9″ pie pan. Place in fridge to cool while you prepare the filling.

Filling:

2 cups of fresh peaches, peeled and sliced

1 cup hot water

3 oz box of orange jello (or you could use peach jello if you can find it in your area)

1 pint vanilla ice cream (Randy was so excited that we found Blue Bell Homemade Vanilla to use)

Add hot water (almost boiling) to jello. Stir until jello is dissolved. Add the ice cream and peaches. Stir and pour into chilled pie crust. Sprinkle remaining crumbs over the top. Cover with plastic wrap and place in fridge until it is set. Serve alone or topped with whipped cream.

Pumpkin-Chess Pie

Can I share with you how excited I got to see this recipe in Fall Baking? oh my gosh, my favorite pie, chess, combined with pumpkin! I simply cannot believe this. A new way to have chess pie with beloved pumpkin, sent me over the top.  No more boring plain ole pumpkin pie. This will be the best Thanksgiving meal EVER…oh and yes, I’m excited about our kids coming also….BUT back to the pie! Oh, ok, and the grandkids, but seriously, pumpkin-chess pie, who would have thought!!!

Ingredients

2 pie crusts (and if Paula Deen is not your absolute fav  person in the whole wide world, you can use bought, but if you do use bought, please make sure it is a good one) If you want to make your own, you are well on your way to becoming the next great  American baker!

1 cup sugar

1/4 cup butter

2 tables all purpose flour

4 large eggs, divided

1/2 cup whole buttermilk

1 3/4 teas vanilla (what the heck, go wild and use 2 teas, it is the holidays after all)

1 (15 oz) can pumpkin puree

1 (14 oz) can sweetened condensed milk (such as Eagle Brand)

1/2 teas ground cloves

1/2 teas ground nutmeg

1/2 teas ground ginger

1/2 teas cinnamon

*(or you could use 1 1/2 teas pumpkin pie seasoning in place of the cloves, nutmeg, ginger and cinnamon)

Preheat oven to 325. Line 2 pie plates with the pie crusts and set aside.

In a medium bowl, beat sugar, butter and flour together until fluffy. Add 2 eggs, buttermilk and 3/4 teas vanilla (I will use 1 teas instead of 3/4). Beat well to combine. Pour into prepared pie crusts, dividing between the two, evenly.

Bake for 30 minutes.

IN a medium bowl, combine pumpkin, condensed milk, remaining 2 eggs, remaining 1 teas vanilla, and seasonings.. Stir until well blended. Pour over cooked buttermilk layer.

Bake for 35 minutes or until set. Let cool and serve with whipped cream.

Cranberry Custard Pie *Taken fom Food Newwork Magazine

This has been such a busy week. Because there have been several days of gloomy rainy weather that makes you want to just bake (right? Doesn’t everyone feel like that? OK, maybe several of you feel like getting a book and just snuggling on the couch and reading, but without a chocolate chip cookie or piece of chocolate cake, what are you going to nibble on while reading?) Which leads me back to baking! Because cranberries just yell Christmas, this pie seemed perfect for decorating the Christmas dessert table, whether for family or company. And because I’m now turning over a new leaf and actually posting recipes that use bought pie crusts (OMGosh, did I really just say that? But reading now that even Paula, yes, even Paula has been spotted to give out recipes using bought pie crusts. All I can say is, “what is the world coming to? Never thought I would see the day. But here it Is folks: *Modified version of recipe found in FNM

FYI I just can’t do it, the bought pie crust, but did use a box of Betty Crocker Pie crusts mix that all you have to do is add water and roll out. (honestly, these are delicious pie crusts, much better and less salt that the refrigerated crusts)

1 (14 oz) box refrigerated pie dough, You will only use 1 of the 2 crusts. Save the 2nd one for another use.

2 tables flour plus more for dusting

2 large eggs

1 (12 oz) bag cranberries, slightly thawed if frozen

1 cup granulated sugar

1/2 teas finely grated lemon zest

2/3 cup heavy cream (no you cannot use Cool Whip, just because I am letting you use bought pie crusts doesn’t mean we are even going to discuss using Cool Whip)

Powdered sugar for dusting

Lay 1 pie crust in the bottom of a 9” pie plate. Preheat oven to 350. Bake the empty pie shell for about 12 minutes. Remove from oven and set aside.

Roughly chop the cranberries and combine with 3/4 cup granulated sugar and lemon zest in a large bowl. Spread in the cooled crust. Whish the 2 eggs, heavy cream, flour and remaining 1/4 cup granulated sugar in a bowl until smooth and pour over the cranberries.

Bake in the preheated 350 oven until filling is set and slightly puffed. About 45 to 50 minutes. Cover edges of pie crust, with foil, if they begin to brown too much. Transfer pie to a rack and allow to cool completely. Dust with powdered sugar

Pie From Paula… Salted Caramel Pecan Pie

Is it any wonder why one item on my bucket lists is to meet Paula Deen? She continues to give out these great recipes that just make you drool when you read the ingredients. I don’t know if I will ever get to meet her, but will continue to make her recipes, just in case I do, I want to be able to tell her how many of her recipes became some of my favorites. This one is at the top of the list. Taken from my new Cooking with Paula magazine*

*2 cups sugar

1/2 cup water

1/2 cup light corn syrup

1/2 cup butter

1 cup heavy whipping cream

1 teas sea salt

1 pie crust (I have to deviate just a bit on this item) She calls for refrigerated pie crusts. If you don’t make your own, buy the box of Betty Crocker pie crust mix. It is $2.09 and makes two crusts. All you do is add water to the mix and roll out. It is really so simple and they are so much better than refrigerated. Trust me on this!

3 large eggs

2 cups pecan halves

In a large skillet, stir together sugar, 1/2 cup water and corn syrup. Cook, without stirring, over medium-high heat for 8 minutes.or until mixture turns a deep honey color. Immediately remove from heat, and stir in butter until melted. Gradually stir in cream and salt until mixture is smooth. Pour mixture into a medium bowl and let cool at room temperature for 30 minutes.

Preheat oven to 350.

On a lightly floured surface, roll crust to a 14: circle. Transfer crust to a 9″ pie place, pressing into bottom and up sides. Fold edges under and crimp as desired. Whisk eggs into cooled sugar mixture until well combined and stir in pecans. Pour pecan mixture into crust.

Bake for 45 to 55 minutes or until center is set. Let cool completely in pan on a wire rack. Cover and refrigerate for at least 4 hours.

French Apple Creme Pie

Taken again from the Gooseberry Recipes, a great pie for the cooler days that will soon be here. Surely, cooler days are coming, right?

Preheat oven to 425 degrees.

2 unbaked pie shells

Apple Filling:

3/4 cup sugar

2 Tables flour

1/2 teas cinnamon

1/2 teas nutmeg

1 Tables lemon zest, grated

5 cups Granny Smith applies, peeled and sliced

4 tables butter

Combine sugar, flour, cinnamon, nutmeg and lemon zest in a large bowl. Add apples and stir to coat. Turn into one of the pie shells and dot with slices of the butter.  Top the pie with the remaining pie crust and cut a 2″ slit in the center of the crust for the air to escape while pie bakes.e ( usually sprinkle a little sugar over the pie crust before putting it in the oven.)

Bake for 10 minutes at 425 and then 30-35 minutes at 375. While the pie is baking, cook the crème sauce

2 eggs, beaten

1/2 cup sugar

1 tables lemon juice

3 oz package of cream cheese

1/2 cup sour cream

In a saucepan, combine eggs, sugar and lemon juice. Cook over medium heat, stirring constantly until thick enough to coat the back of a spoon. Add cream cheese and sour cram. Take off heat and stir until well combined. Pour over slices of the apple pie when serving.

Pumpkin Cheesecake Pie

I just can’t help myself. When I know that Fall is almost here, I start to pull out pumpkin recipes. Today, I even pulled out an orange shirt in honor of the first cool day being just around the corner (probably 40 to 60 days, but we will take it when we can get it). Orange shirt…orange pumpkins! Randy knows what this means. That the time is very near when he will be bringing in the boxes of Fall decorations from the garage. He is so excited! I told him that this year, I will find him a pumpkin t-shirt to get him really in the festive mood for our week of bringing all the pumpkins out. Does life really get any more joyous?

1 egg yolk

1 extra large graham cracker pie crust

2 (8 oz) packages of cream cheese, softened

1/2 to 3/4 cup sugar (your preference, I use 3/4, does this really surprise anyone?)

2 eggs, room temperature

15 oz can of pumpkin (not the pumpkin pie filling but just plain pumpkin)

1 1/2 teas cinnamon

1/2 teas ginger

1/4 teas cloves

Garnish: whipped cream and toasted pecan sprinkled over the top, if desired

Beat the egg yolk and brush on the pie crust. Bake in preheated 350 degree oven for 5 minutes.

Set crust aside. In a large mixing bowl, beat the cream cheese and sugar.. Add the pumpkin and remaining spices and mix until throughly blended. Pour into pie crust and bake at 350 for 40 to 45 minutes or until set.

Cool and refrigerate several hours or overnight (covered after the first couple of hours of cooling)

Top with whipped cream and crushed pecans
