A sweet friend, Jerry and I have been exchanging recipes for years. A couple of days ago she sent me this recipe I just had to try! When she sent it, I, of course told her that she should have sent it the day before when i was making grocery list to be delivered a couple hours before she sent it so I wouldn’t have to run to the store to buy ricotta in order to make it! She replied with “well I thought for sure that TKBakesalot would have everything needed on hand”! And that is how we communicate all the years we have been friends! it is fun and makes us both laugh at each other! And she has given me lots of great recipes throughout the years! Well, I didnt have to go to the store! a sweet friend that lives here at Avenida, just had some knee surgery and I went to visit her a couple of hours after Jerry sent me the recipe. I took a copy of it to show her and I said ” doesn’t that sound good” ? (She loves to bake as much as I do). I told her that as soon as I bought ricotta, I was going to make us some and I would share with her to which she replied “trudy I have a whole container of ricotta in the refrigerator that I had bought to make ricotta cookies but I never got them made because of the knee surgery please take it home with you and use it.” What angel! So I did just that! I took it home and made two loaves, one for us and one for Jerry! I shared mine with Mary (the ricotta friend) an took Jerry hers so she now owes me big time! It is always fun to have her owe me! Allows me to be able to ask her favors! to be honest I could’ve bite of it when it came out of the oven and I didn’t really think too much about it but as it cooled and instead of wall it was really a good cake it’s a perfect cake to have with a cup of hot tea or a cup of coffee, or in my case, a diet Dr Pepper! I did use almond extract instead of vanilla and added crushed almonds over the top before baking it! sprinkled powdered sugar on top about 15-20,min after taking it from the oven! Directions said 25-30 min but mine took 40 min before testing done. ( i made mine in a loaf pan). Thank you All Recipes and Jerry!! I better get busy making the ricotta cookies now for Mary!
