Sunday Sliders

Just a quick post today. Am busy getting ready for 23 people to come over tonight for dinner and Bible Study. So……the sliders. I was thinking of how to make lots of them for this group, when all of a sudden around midnight the other night the thought came to me. Why not mix the meat with all the stuff I want to put in it, like french onion soup dry mix, garlic, pepper and salt and a little catsup and then spray a jelly roll pan with Pam, line it with foil, spray the foil with Pam then pat out the meat, very thin, into the pan. Bake it and then cut squares about 3″x3″ . That will give me about 24 meat patties to put in Hawaiian rolls. So will have 2 jelly roll pans tonight. Will saute onions in case people want to put them on their “sliders”. I figure if Wendy’s can have square patties and make a million, I can make square sliders and save myself a little time in not pressing individual patties. So that is my thought of the day. Gotta run and clean. Super Saturday

Remember in the 80’s when super saturday meant cartoon morning? I remember hearing our kids on Fri night saying, “yeah, Super Saturday is in the morning”, and they would lay around in their jammies watching cartoons till noon, if I’d let them. But, I usually didn’t let them except if it was cold and rainey outside. Now SS has a whole new meaning. Super Saturday is a day when we don’t have any committments of ANY kind and can just do what we want. Thank the Lord, Frosty WANTED to put up our Christmas lights today! Yep, that’s right, we are the first in our neighborhood to have lights up. We were first last year also, and the year before that………and that………..well, as you can tell, I get pretty excited about this time of year. The lights are just some of my favorite things to look at. We usually go out at least 3 or more times each Christmas season, driving around different parts of the city, drinking Starbucks and listening to Christmas music. Can you tell that I am married to one fabulous guy? He ran (well…….actually he walked in, but it makes the story sound better to say ran) in the house and alerted me this morning that two radio stations were already broadcasting Christmas music, but before he could finish the sentence, he quit talking to notice that I already had Christmas music playing on the CD player. I just could not have him outside putting up Christmas lights without me in here listening to Christmas music. It’s just not right to do otherwise. So as of today, November 14th, we are ready. The trees are just shaking to get out of the closet upstairs and have the lights put on them, so this week, before all the company arrives for Thanksgiving, we will have at least one tree up and lit. It’s ok, it just gives Frosty a couple more lights to go around and unplug before retiring for the night. He has already called the electric company and alerted them that we need extra power on our street. So if you are looking out your window tonight and you see a little glow over by Prestonwood,,,,,,,,,,just drive on by, we’ll leave the lights on for ya!……………..Am excited about what I am going to write about tomorrow. Making sliders for our friends tomorrow night. A new way of making them. Stay tuned, I think you will like what I’m going to do……..Now get off this computer and go shopping for new lights for the house! Spanish Olive Cheddar Muffins

Before I begin this recipe, I just have to share something with you about some new friends God has blessed me with. There are 3 sisters, Susan, Dena and Wendy who have come into my life and each of them have so many talents that it has been pure joy getting to know them. Wendy is a nurse and if you know her, you know she makes one great nurse. Her heart is of just pure sweetness and mercy. Susan is a little firecracker who loves to cook and makes some great lavender warmmeups which she sold in our Mistletoe Market. Susan passed on a great little thought yesterday and I told her I wanted to share it on the blog, so here it is, “nothing would be more tiresome than eating and drinking, if God had not made them a pleasure as well as a necessity!”  Think about that, what else do we do so many times a day,  every day of our lives, yet, each time we feel not just satisfied, but blessed and enjoyment and usually always looking forward to the next meal.

Dena, well, what can I say about Dena? We met first at church and immediately felt like old friends. We share a love of cooking, a thankfulness to the Lord for His grace and mercy for our lives of us both wasting many years not living according to His will. We have had so many talks regarding our hum,….. “precious?” children that we have grown as friends over the last two years because of tears, laughter and just enjoying sitting out in the sunshine having lunch. Thank you, each of you for the joy you have brought to my life. The recipe I am putting on here today is from Dena. She had a few of us over for chile and these melt in your mouth muffins. You will not be disappointed, trust me, they are awesome.

2 cups flour

1 tables sugar

2 teas baking powder

1 teas dry mustard

1/2 teas baking soda

1/2 teas salt

1/2 teas ground red pepper

1/4 cup butter not  softened

1 cup (4 0z) shredded cheddar cheese

1/2 cup chopped pimento-stuffed green olives

1 1/2 cup buttermilk

1 egg

Preheat oven to 375. Grease or paper-line 12 muffin cups

Combine flour, sugar, baking powder, mustard, baking soda, salt and red pepper in large bowl. Cut in butter with pastry blender until mixture resembles fine crumbs. Stir in cheese and olives.

Combine buttermilk and egg in small bowl until blended. Stir into flour-cheese mixture just juntil moistened. Spoon evenly into prepared muffin cups.

Bake 25 to 30 min or until golden brown and wooden toothpick inserted in center comes out clean. Remove from pan and serve warm or cool completely and serve.

Sunday Nov 8th

Well, the Mistletoe Market is over. We had two days of fun and visiting with friends and new friends who came in the door. We estimate that over 200 women visited our MM and the days were just filled with laughter, ladies standing around chatting with each other and sipping cider and taking nibbles of Peggy’s famous Rolo treats which I will share with all of you. What a blessing Fri and Sat were to have so many friends support us in our sharing of our hobbies and crafts. Somewhat tired, I am also a little tired, we now will be bringing in the furniture which has been in the garage for 3 days making room for all the goodies. God blessed us with beautiful weather. It was an amazing time. Thank you Cora, Dianne, Peggy, Susan, Karen, Barbi for allowing me to house your beautiful wares. Thank you Dena for the wonderful food you provided to us for our lunch and for snacks for the visitors. It is times like these, when I think back over the sweet and special time we had that I realize how fortunate I am and blessed to have such precious friends. I love each of you in a very special way and each of you have blessed my life. Thank you for your friendship and love. Let’s be thinking of what we can do next year!

Pre Mistletoe Market

Well, I did it, I finally took 30 minutes to go get a hair cut. Since I didn’t have alot of time, I didn’t go to Lisa who normally cuts and colors my hair (yes, these red little locks are not natural, as probably no one knew, especially since I usually wait about 2 months before realizing the roots are 3 inches long,ha) Anyway, since I was in a hurry and I didn’t want to have “helmet hair” or like we like to call it in Texas, “big Dallas hair” I just couldn’t take it anymore. When viewing myself in the mirrow this morning, I realized that I was no longer 5’5″, but had grown to 5’7″ since my hair had so graciously given me 2 inches in height. So……as I as saying, I just couldn’t take the hair one more day, so I pull into a parking lot where I proceed to go into one of the little “neighborhood spots” that you take your 3 rd old to or your 80 yr old father. I knew I shouldn’t do it, but I did it. All I can say is that I no longer have big hair, I hardly have any hair at all. If I don’t wear earrings, I’m afraid, people will mistake me for a man. So now out come the big earrings. Don’t have time to worry about it, am moving furniture out into the garage making room for the venders to come tomorrow to set up for Mistletoe Market. Banana Bread (really the best)

Well, I know that I have already put a recipe on the blog for Banana Cream Cheese bread, but I have to admit that it is not my favorite. The one I am putting on today I have made since the 1970’s and every time I take it someplace or someone is here that eats it says that it really is the most moise, most banana tasting bread ever. So have to put it out there for you to enjoy. I love to bake it, then slice it very thin and spread either cream cheese and strawberry jam and make a sammie out of two pieces, or just butter (I get more like the “butterkins” on tv everyday, don’t I)

I think you will just throw out the other recipes for banana bread, once you try this one. A friend and neighbor in Corpus Christi gave this to me. She was Italian from NYC and every recipe that she gave me quickly became a favorite. Her name was Cam Parsley and she was one of the best cooks ever. Always brought different foods to our house and we exchanged recipes all the time. I miss having a neighbor like Cam. She was one in a million. Thanks Cam for all the great food you introduced us to. We still make your meatballs, strawberry pie, banana bread and so many more!

November First Sunday

Can you believe it? It is November and the air has a “holidayish” feel to it already. Coming home a few minutes ago, we saw 2 different neighbors out putting Christmas lights on. So……………Randy, oops I mean Frosty, will have to get out this week and begin untangling lights and get them up, as we cannot be the last to have our lights up, especially since we are known as Noel and Frosty from November through Christmas.

He keeps asking me if I have written about our conversation the other day and I have not, thus far, so think it is a great time to write about it. We were talking with some friends about husbands’ hobbies. I told Frosty that sometimes I felt bad that he never went to play golf with friends or fishing or just out with any other men, but he looked at me and told me that I didn’t need to feel bad, that if he wanted to go, he would, but that “I was his hobby”……..now, I know what you are thinking, “ah, that is just so sweet”. But I have to be honest and tell you that I think he says that because he knows that if he leaves me along for long periods of time on Saturday that I would probably go shopping and spend money. So, he stays with me, takes me shopping and we go out to eat, the movies and sometimes just driving or looking at houses. And while that is so very sweet, he is actually protecting his pocket book. So……..on one hand, it is awfully sweet and on the other, it shows that he is keeping tabs on me so I won’t be out spending his hard earned money. But, I think I will go with the first thought and be grateful that he enjoys being with me and is truly my best friend and we just have such a great time together that I am so glad that “I am his hobby”. We have lots of wonderful memories and hopefully many more years to enjoy being each other’s hobby. Love you, Mr. Frosty!

Fallish Friday

Good morning, the air is crisp, the sun is out and God is on His Throne!. What a glorious day to celebrate the blessings which we have received.  Read this morning about “patience” that in Hebrews 12:1, it says, “let us run with patience”. We associate patience as sitting, waiting and being in a “still mode”. But this verse instructs us to “run” with patience. It is in the everyday life of errands, work places, families and even church work that we need to show His “patience” to others. The joy that we have should flow over to others when they are in a valley, or when we are in a difficult place in our lives. The “patience” which can only come from the Lord to see that even when we cannot see His hand, we know we can trust His heart. So run with not only endurance, but with patience today and let others see that there is hope, there is joy and we can have a “perfect peace” no matter the circumstances in our lives because of His abudant saving power! Now  lets all of us get out there and be a blessing to someone today.

Fireplace Thursday

Yeah! The cooler weather is back. Had my cholestrol checked this morning. Will find out in a few days if my blood has turned to pure butter yet. In the meantime, I came across an old recipe which I received when I lived in Corpus Christi. We belonged to a club which served this cake and it became my favorite. So for my birthday while dining there, the server (who had become a friend) gave me the recipe. She had asked the chef if she could have it to give to me and so I became the proud owner of a recipe which changed my “entertaining favorite dessert”      Have not made it in a while so when I saw it, I quickly pulled it from the drawer and will be making it for our Bible Study group for Sunday night dinner…….try it, I think it will quickly become a favorite in your home as well……

Chocolate Italian Cream Cake

1 stick of softened butter

1/2 cup shortening

2 cups sugar

5 eggs, seperated

2 cups cake flour

1 teas baking soda

1/3 cup cocoa

1 cup buttermilk

1/2 cup sour cream

1 tables vanilla

1/2 cup coconut (for the topping)

1/2 cup chopped pecans (topping)

Preheat oven to 350. Cream together the butter, shortening, and sugar. Add egg yolks one at a time. Mix in flour, baking soda, cocoa, buttermilk, sour cream and vanilla.

Mix together for 2 min or until batter is smooth.

In a spearate bowl, whisk egg whites until they are firmly whipped, (this takes about 5 to 7 mins) and fold into cake batter. Spray three 9 inch pans, divide batter into the three pans, equally. Bake for 20-25 min or until cake tester comes our clean. (in our house, that amounts to a knife)

Frosting

1 stick softened butter

16 ounces softened cream cheese

5 cups powdered sugar

1/2 cup cocoa

1 tables vanilla

Cream together butter and cream cheese until smooth. Add powdered sugar, cocoa and vanilla.

Place first cake layer on cake stand or plate and frost the top only. Repeat with the next two layers. Once all three layers are assembled, ice the entire cake. Sprinkle coconut and nuts on top of cake for decoration…..
