Sour Cream Corn Bread

1 can yellow cream style corn

1 cup sour cream

1/2 cup liquid oil

2 eggs

1 cup self rising corn meal

Mix altogether and pour into a hot greased skillet. Bake at 400 for about 40 min.

A great twist to this recipe is to make up the cornbread except do not bake.

Brown 1/2 lb of ground beef with 1/2 cup chopped onion. Cook until onion is tender and beef is done. Sprinkle 1 teas garlic powder, 1/2 teas pepper and 1/4 cup picante sauce. Cook for about 10 minutes over low heat and flavors are blended into meat.

Pour 1/2 of the corn bread mixture into the skillet. Sprinkle the meat mixture over this. Sprinkle 1/2 to 1 cup of shredded cheese over meat mixture (depending on taste). Pour the rest of the corn meal mixture over the meat mixture and bake about 45 to 50 minutes. Serve this with a great pot of pinto beans and you have a meal in itself……..

Fruit Compote

My sister-in-law gave me this recipe after I went crazy over the one she served at Christmas brunch a few years ago. It is just delicious and everyone always wants the recipe.

6 coconut macaroons crumbled into a 9×13 pyrex which you have sprayed with Pam.

Layer each of the following: drain each can before layering: peaches, pears, apricots, pineapple chunks, bing cherries.

Crumble 6 more coconut macaroons and add 1/4 cup melted butter and 1/4 cup brown sugar. Mix and pour over top of fruit.  Top with 1/2 cup sliced almonds. Bake at 350 for about 35 to 40 minutes.

Ten Minute Alfredo

Serves 4

Ingredients:

1 tables garlic, minced

1 tables olive oil

1 pint heavy cream

1/2 cup parmesan cheese

Salt and pepper to taste

Directions:

Heat oil in a saute pan and add garlic. Add heavy cream and bring just below a boil. When cream begins to bubble, add the cheese and stir until it thickens. Season and serve over your favorite pasta. Sprinkle parsley over the top. This is quite good and oh so easy. Good enough for company, with a great salad and garlic bread.

Chicken Supreme

This is a recipe which we ate at a friends house who served it to us with a salad and homemade cookies. A wonderful light luncheon just perfect for those days when you want to have friends over, but you don’t have alot of time to think about what all you would cook. This is so easy, and all the women wanted the recipe. So thank you Martha for sharing it!

1 whole chicken boiled and deboned saving the broth for the rice

1 pkg. of Uncle Ben’s Wild Rice cooked in chicken broth instead of the water it calls for (follow cooking directions on box)

1 can of crem of chicken or celery soup (I like the celery, it is not so chickeny (is that a word?)

1 cup of mayonnaise

1 cup of grated cheddar cheese

1 can sliced water chestnuts (the size of a tuna can)

1 can chopped canned pimentos with liquid (4 oz)

2 cans french style geen beans, drained

1 can french onions for topping

Combine all ingredients except french onions.  Spray your 9×13 pyrex pan with Pam, or two 8×8’s and bake for 45 minutes at 350 degrees.  If you make the 8×8’s you will only need to bake for about 30 mins. Add french onions on top and bake for another 5 mins or until crisy light brown……serve hot with a salad.

Sweet Potatoes in Orange Shells

As this is my most favorite time of year, when it just feels good to sit on the couch at night, light the fire place if it gets below 70 and look through my recipes. Came across my old recipe from sometime in the 70’s (yes, I’m old) for sweet potatoes. I had really forgot about this and am going to serve them this year. Wanted to pass it along. It just adds a little “spunk” to your same ole potato casserole. You can use any recipe of sweet potatoes you like, but instead of putting them in a pan to bake, use the following:

Depending upon how many guests you are serving, you will need 1/2 orange per person. Scoop out the inside of each orange half. Reserve the juice and pulp. To your sweet potatoes, add some of the juice from the oranges (to your liking). Put the sweet potato casserole into the empty halfs and top with a marshmallow and bake until the marshmallaw is melted. If you need a sweet potato recipe to use for these, let me know, and I will post one that works great in these. The oranges make it taste so good and make a lovely presentation.

Bistro Beef

2 /2 pounds ground beef (you can use ground turkey and it is great)

1 9 oz. package thin egg noodles,cooked and drained

2 8 oz cans tomato sauce

2 cloves garlic, minced

2 teas salt

4 teas sugar

2 16 0z cans of undrained tomatoes

2 cups sour cream

6 oz softened cream cheese

salt and pepper to taste

12 green onions, chopped

brown meat, drain. Add tomato sauce, garlic, salt pepper, sugar and tomatoes. Simme, covered over low heat for about an hr.

Preheat oven to 350 dgrees.

Cook noodles according to package directions. Drain. Combine noodles with cubed cream cheese. Stir to melt cream cheese. Add sour cream and green onion.s

Spray a 9 x 13 casserole pan with Pam. Put half of the noodles on bottom. Spread 1/2 meat mixture over noodles. Repeat layers. Bake for 25 to 35 minutes until mixture is bubbling hot.

If you want to make ahead. Use two 8×8 aluminun foil pans. Spray each pan with Pam. Layer the noodles and meat mixture, ending with meat. Wrap with foil and put in ziplock freezer bag. When needed, thaw completely and bake at 350 for 25 to 30 minutes until casserole is bubbling hot. Makes 2 8×8 casseroles……

Chicken & Dressing Casserole

8 chicken breast

4 cups chicken broth

2 pkgs Stove Top corn bread dressing

2 cans cream of mushroom soup

2 cans cream of chicken soup

butter

You can divide this recipe into two 8×8 buttered aluminum pans and freeze until needed.

Boil chicken until done and tender. Cool and debone. Reserve broth. Place 1/2 of the dressing mix in buttered casserole. Next, layer 1/2 of the chicken. Combine broth soup and seasonings from dressing mix. Pour 1/2 of this over chicken. Repeat layers. Dot with butter.

You can either bake at 350 for about 25 to 35 min. or you can wrap with foil and feeze until company surprises you and you don’t have anything made, Oh Yes, you do, you have a casserole that is delicious and all you would have to do is thaw, cook a pot of green beans with bacon and oninons and but Owen’s packaged garlic mashed potatoes. Sister Schubert’s wonderful frozen rolls and you have a great meal…….by the way, if you are having coming and you don’t have time or energy for baking dessert, Pepperidge Farm frozen cakes are so good and so cheap….About $5.00 and the coconut cake is just delicious. We can finish one of those cakes on in two episodes of watching “24”….

Chicken Spaghetti

1/2 stick butter

1 cup chopped onion and 1 cup chopped bell pepper

1 can Rotel tomatoes

2 cans cream of mushroom soup

1 small jar diced pimento

1 pint chicken broth

1 cup chopped cooked chicken breast

2 cups shredded cheddar cheese

Saute onions and bell pepper in butter. Add rotel, mushroom soup, pimento, broth and chicken. Cook until veggies are tender. Cook and drain a 12 oz package of spaghetti. Add veggie mix to the spaghetti and mix throughly with about 1/4 of the cheese. Put into a greased casserole dish and top with the rest of the cheese. Bake in a 325 oven until the cheese is melted. May be frozen for later use. Serves 6. With french bread and a salad, the dinner is complete. Bake 2 of these at a time and put one in the freezer and just pull it out of freezer in the morning and let it sit in fridge until you get home from work. Bake it while chopping salad.
