Popovers

These little gems are delicious with butter, syrup or jam. We have them for breakfast and sometimes we have them with pot roast, like they do at Lawry’s Steak House, served with their prime rib with plenty of au jus poured over it… only 4 ingredients and so easy to make.

Preheat oven to 450 degrees and grease either 6 ramekins or 9 muffin tins

2 eggs, slightly beaten

Add 1 cup flour to the beaten eggs and just stir until smooth. Add 1/4 teas salt. Slowly add 1 cup milk to the egg/flour mixture and just stir until smooth. Do not over mix. Pour and divide batter between the tins/ramekins. Bake for 20 min and then decrease oven temperature to 350 and bake for another 17-20 min or until popovers are browned and sound hollow when you tap the top….Remove from oven and serve immediately.

Angel Biscuits

The Christmas tree is put away and the Egg Nog is gone. We have turned one of our Christmas trees into a Valentine Tree and am already looking through new issues of Southern Lady or Taste of Home for recipes that my “Valentine” will love coming home and sitting down to gaze upon.(well, actually we graze more than we gaze). This recipe for Angel Biscuits will go perfectly with breakfast or dinners and you will be able to turn any husband into an “Angel” when he takes one bite of these. They are simple and delicious.

Makes about 2 dz. The addition of yeast will guarantee fluffy biscuits every time. Do NOT let the word “yeast” scare you off.

1 envelope active dry yeast (1/4 oz)

1/4 cup warm water (just be sure it is barely warm, certainly not really warm as this kills the yeast)

2 tables sugar (do not use sugar substitute as the yeast needs the real stuff to activate)

1 tables baking powder

1 tsp baking soda

1 tsp salt

1/2 cup shortening, cut into pieces and 1/2 cup cold butter, cut into pieces

1 1/2 cups buttermilk

Preheat oven to 400. Combine yeast and warm water in a 1 cup glass measuring cup; let stand 5 min.

Meanwhile, whisk together flour and next 4 ingredients in a large bowl; cut in shortening and butter with a pastry blender until crumbly.

Combine yeast mixture and buttermilk and add to flour mixture, stirring just until dry ingredients are moistened. Turn dough out onto a lightly floured surface, and knead about 1 min.

Roll dough to 1/2 ” thickness. Cut with a 2 in round cutter or into 2 ” squares. Place on ungreased baking sheet.

Bake at 400 for 12 to 15 min or until golden brown.

Very Easy Hot Rolls

When I tell you that these are easy, trust me on this. Truly they are the easiest. They have never failed me yet…so if you are one who never tries to make homemade rolls, you can make these. If they don’t turn out, just use them as door stops or paint them and use as ornaments on the tree. There is so little cost in them, that you won’t feel bad if they don’t turn out good…..I’m kidding, they are easy, so good that I use this same recipe to make homemade cinnamon rolls.

2 packages of dry yeast
1 cup warm water (be sure that it is just barely warm, too hot of water ruins the yeast)
1 egg
1/2 cup sugar
1 teas salt
3 1/2 cups all purpose flour
1 stick of butter

Grease a large glass bowl with Pam or butter. Set aside. In another bowl, dissolve the yeast in the warm water and stir until yeast is completely dissolved. Add sugar, egg and salt and stir until well blended. Add flour 1 cup at a time. Sometimes, I don’t use the 1/2 cup, maybe just a little of it. You want the dough to be stiff, and not sticky, so add last 1/2 cup until you get this nice stiff dough. Place dough on waxed paper or towel that you have sprinkled about 1/2 cup flour on. Knead for a couple of minutes, just until dough is easily able to be handled without it sticking to your hands. Place in greased glass bowl and cover with a towel. Put in a warm place until double in size (about an hour) (I usually put mine in a closet or on a floor in front of where the sunshine comes in. You don’t want drafts to get to it.)
When double in size, roll out dough to about 1/2″ thickness and cut with a biscuit cutter. If you don’t have one, use a glass the size of the roll you want and use the open end of the glass to cut dough into the round circles. Get a 9×13 pan and melt the cube of butter in it. When butter is melted, place each circle of dough into butter and flip it over to where both sides have been dipped into the butter. You might need a little extra butter to finish up all the rolls. When you have used up all the dough, place a towel over the rolls and agin place in a warm place without drafts, until rolls are almost double in size. Bake in a 400 degree oven for about 20-25 min, depending on what size roll you have made. Brush tops with more butter if desired.
I use this same recipe for cinnamon rolls. After rolling out the dough, I spread softened butter onto the 1/2″ dough and then sprinkle buttered dough with cinnamon and brown sugar. Roll up dough and then cut into slices about 1″ thick. Place in buttered pan and let rise just like above directions. Bake until golden brown and rolls that are in the center of pan appear done. Frost with Powdered sugar glaze. OR….use cream cheese frosting for the ultimate cinnamon roll.

Heavenly Hots

These are those amazing little pancakes I told you about yesterday. A sweet friend, Karen commented yesterday to say that she agrees with me on this. She has been making them for years. So here is the recipe:

1 cup sour cream
3 tables flour
1 1/2 teas sugar
1/2 teas baking soda
2 eggs, beaten
Mix all ingredients together. Spoon onto hot griddle. When browned on one side, flip onto other side, just like you would with pancakes. Serve with fresh fruit, melted butter and syrup…..these truly are a little “slice of heaven” on a plate.

Baby Hot Browns with Spicy Candied Bacon

These are GREAT little appetizers to take to parties or serve company. Taken from a Paula Deen magazine, there are easy, yet scrumptious!
1 cup firmly packed light brown sugar
1/2 teas ground red pepper
16 slices thick cut bacon
1/4 cup softened butter
24 (2 in thick) diagonally cut french bread slices
3 tables butter
3 table flour
2 cups whole milk
2 cups ( 8 oz) shredded sharp cheddar cheese
2 tables freshly grated parmesan cheese
1 1/2 lbs thinkly sliced smoked deli turkey
2 tables chopped fresh parsley

Preheat oven to 400. Line a large rimmed baking sheet with foil. Spray a wire rack with nonstick cooking spray and place on baking sheet.
In a bowl, combine brown sugar and red pepper. Dredge bacon slices in a brown sugar mixture, shaking off excess and place on prepared rack. Bake for 15-18 min or until crisp and golden brown and caramalized. Let cool on rack. Cut each slice into 3 equal pieces.
Preheat broiler. Line another large rimmed baking sheet with foil. Using 1/4 cup of the butter, spread over 1 side of bread slices; place slices, buttered side up, on prepared baking sheet. Broil until toasted. Set aside on pan.
In medium saucepan, melt 3 tables butter over medium-low heat. Add flour, whisking until smooth. Cook for 1 min, whisking constantly. Gradually add milk, whisking until smooth. Cook over medium-low heat, whisking constantly for 10 min or until thick and bubbly. Remove from heat; add cheeses, whisking until cheese melts.
Arrange turkey slices over toasted bread slices. Spoon about 2 tables cheese sauce over each. Broil for 2-3 min or until lightly browned and bubbly. Remove from broiler and place on serving platter. Top each slice with 2 bacon pieces. Sprinkle with chopped tomatoes and parsley if desired. Serve immediately.

Peach Enchiladas

2 (8 oz) cans refrigerated crescent rolls
2 lbs fresh, firm, ripe peaches, peeled and quartered (about 4 large)
1 cup butter, melted
1 1/2 cups sugar
1 tsp. ground cinnamon
1 (12 oz) can citrus-flavored soft drink
Preheat oven to 350. Unroll crescent rolls; separate into triangles. Place 1 peach quarter on wide end of each triangle; roll up triangles around peaches, starting at wide end. Place point sides down, in a lightly greased 13×9 pan.
Stir together sugar, butter and cinnamon and drizzle over rolls; pour soft drink over rolls.
Bake at 350 for 45 min or until golden brown and bubbly.
For citrus-flavored solf drink, I used Mountain Dew

Homemade Pizza

Wanted to share this with you. Last Wednesday, I went to our new grocery store that is absolutely wonderful. It made me feel like I was in Texas walking the aisles of Kroger, with the bright lights and wide isles. Oh to walk in a new grocery store is one of my favorite things to do. Just explore each isle and know that I will proably be taking home a new item, that I had never seen before. I was searching for the Sister Schubert Rolls, which were not there, but I am not complaining. I have learned to make do and have even made homemade rolls myself since the SS rolls are unavailable to us. But as I was walking through the deli, I spotted a bag of garlic-herb pizza crust. It was cheap and it looked just like what I would love to make for dinner. So I bought it and drove home all excited to make homemade pizza. It was so simple. I even threw it around in the air, just like you see them in pizza kitchens. I sauted 1/2 lb of italian sausage with onions and green bell peppers (you can adjust the amount you would want), with garlic and italian seasoning. While the meat mixture was cooking, I baked the dough for about 8-9 min after drizzling a little olive oil over it. Pulled it out of the oven and spread pizza sauce over the dough. Spread the meat mixture over the sauce and sprinkled 3 types of italian cheeses over this. Baked it for about 20 min at 375 until the cheese was bubbling. Took it out of the oven and let it sit for about 10 min. We thought it was one of the best pizzas we had eaten. So easy, took 30 min and was so inexpensive. Look in your deli/bakery for the dough which needs to be rolled out. Makes a great homemade pizza.

Ease Blueberry Skillet Coffee Cake

This is so cool. Just bought a new Paula Deen Cookbook and when I saw this recipe, I knew I would have to make it and share it.

Streusel Topping
1/4 cup slivered almonds
1/4 cup granulated sugar
2 tables butter
2 1/2 tables flour
1 teas ground cinnamon
Coffee cake
2 tables unsalted butter
2 tables light brown sugar
One 12-oz tube buttermilk biscuits
1 cup blueberries, fresh or thawed frozen ones
Preheat oven to 375. To make the streusel, combine the almonds, sugar, butter, flour and cinnamon in a food processor and pulse until large crumbs form.
In a 9 in skillet (cast iron if you have one), cook the butter and brown sugar over medium heat until melted. Arrange the biscuits in a single layer in the skillet. scatter the blueberries over the biscuits and the streusel topping over the berries. Bake until the biscuits are golden and a tested inserted in the center of a biscuit comes out clean, about 30 minutes.

Oven Baked Blueberry French Toast

2 (8 oz) packages cream cheese, softened
1/2 cup sugar
2 teas vanilla
1 teas cinnamon
2 large eggs
1 1/2 cups milk
10 slices French bread, 3/4 in thick
2 cups fresh blueberries
Maple syrup for serving and powdered sugar if desired to sprinkle over top
Preheat oven to 350 and lightly grease a 9 x 13 baking dish.
Beat the cream cheese, sugar, vanilla and cinnamon in a large bowl, with mixer until well blended.
Add the eggs, one at a time, mixing well after each addition. Add the mil, and mix well.
Arrange the bread in the prepared baking dish and spread the blueberries on top of bread. Pour the cream mixture over the bread. Let stand for at least 15 min before baking (or you can cover the pan and place in refrigerator overnight). Bake for 40 to 45 min until golden brown (take the cover off before baking if it has been covered overnight)
Serve with syrup and powdered sugar.

Baked Oatmeal (you have to read this before turning up your nose)

These are awesome. It is like having a giant oatmeal cookie that is good for you. Better still, you an make these, freeze them and pull them out for a quick breakfast before heading out the door. I went to a meeting yesterday where a lady was giving cooking demos and handing out recipes of things she had made and that her family loved and this was one of their favorites. So here it is.
4 cups quick oats
1 cup sugar
3 teas baking powder
1 teas salt
2/3 cup oil
2 eggs, beaten
1 1/2 cup milk
Combine oats, sugar, baking powder and salt in a Ziploc bag. Mix oil, eggs and milk in small bowl. preheat oven to 350. Spray a 8×8 pyrex pan with Pam. Mix dry ingredients and wet ingredients together. Pour into baking pan and bake 30 min until light brown edges appear. Cut into squares and wrap them individually. Serve with fresh fruit.
