Blueberry Orange Whipped Cream Scones
This morning on my way into the kitchen, I did what i normally do and ask Randy what he wanted to breakfast! Usually he kids and says “oh just a little bit of bacon, eggs, french toast and hash browns with fresh squeezed orange juice” to which i reply, “what is your second choice?” and i usually hear, “a half of bagel with peanut butter and jam”!
So as i passed by him to go make us breakfast, I thought I heard him say “let’s make scones”. translation: please go make me the whipped cream scones I love so you will have so much fun making something before 8 am!
But I have to admit, I do love making these and they are so delicious with apricot jam and butter melted over the top! so I got out Tis So Sweet cookbook and made them. Because I had frozen blueberries and some fresh oranges, I decided to add some orange zest and a cup of blueberries to the recipe and they were absolutely delicious. I have changed the oven degree that I had in the book ( I had 375 degrees in the recipe) but for some reason I’ve changed it and turned the oven up to 400 today and because I cooked the scones as a whole today it took longer for them to bake! But the wait was worth it! I baked them for 25 min and they turned out wonderful! If you have the cookbook Tis So Sweet, they are on page 37!
