While making (and constantly taking a bite along the way) a King Ranch Casserole for our dinner tonight, an idea popped into my head that sometime when I just wanted soup instead of a full meal of beans, rice and the KR casserole, why not make it into a yummy soup? Especially in cooler weather when we are craving soups? Because the base mixture for the casserole has so many great flavors, it would make a delicious soup! Here is what I have feel would satisfy the most soup lover and also so easy to make! As I continued to cook the base of the casserole, I could just imagine adding a regular soup size can of chicken broth to this and have one amazing soup for dinner! Remember, you can always adjust the amount of broth to make it as thick or thin as you want!
KR casserole base;
In 2 tablespoons of butter and 2 tablespoons of oil, sauté:
1/2 chopped onion
1/2 chopped green bell pepper
1 stem of fresh celery
stir until veggies are beginning to get soft! Stir in the following:
1 can of cheddar cheese soup
1 can cream of chicken (or mushroom)
1 can mild Rotel tomatoes with green chilies
1 can chicken broth
add garlic to your liking and black pepper with 1 teaspoon enchilada seasoning (or taco seasoning if you prefer)
Add 1 (or more) cups of cut up rotisserie (or cooked) chicken to the soup mixture!
Let the soup continue to cook on low for about a hr or more or cook this in a crockpot if you don’t want to stay home from shopping or movies to watch it cook! Before serving, cut 2-3 yellow corn tortillas into strips and fry in a little oil until crisp! Ladle the soup into bowls and add tortilla strips on top with some shredded cheese! This time because I am making the casserole I only have a picture of the base with out the chicken broth added! But this will be agreat recipe to have in freezer for quick dinners when you don’t feel like cooking but want something comforting and delicious!

This recipe will feed about 3 to 4 easily
Especially if you don’t want to get too full so as not to be able to have a big slice of chocolate cake for dessert!
