Beef Stew

A few nights ago when we were still confined to indoors because of the ice/snow that lingered on the ground, (don’t be misled by the negative words, I loved this past week as it gave me excuse for staying in and baking until I ALMOST ran out of butter and eggs) The thoughts of beef stew just kept going through my mind. I had ordered something I had not ordered before with my grocery order so found the stew meat in the freezer and went to work! Normally, for some reason when I make soup or stew it seems like I use chicken and chicken broth but because I had ordered this new item, I decided to try something new. I shared a little bit of the stew with a friend that came to help me repair a leg on a antique chest that broke when I was rearranging furniture the day before. Even he said he had not had a beef stew that he loved as much as this one and both Randy and I agreed that this was some of the best stew I had ever made. And we owe it all to this new ingredient and trying something different.

As we sat and enjoyed the stew, I was reminded of the vegetable beef soup we used to have when I was in elementary and it was then that I began to love having Fritoes with it instead of crackers. So that’s exactly what I did the other night. I topped it with Fritos and Randy used his crackers. We were both happy campers!

1 lb of stew meat chopped up into tiny pieces,

1 small onion, chopped

3 medium size carrots, sliced

1/2 green bell pepper cut up (optional as I know some people don’t like bell pepper or they have trouble digesting it)

2 celery sticks sliced

3 medium size potatoes cut in small cubes

1 teas thyme

1-2 teas diced garlic or 1 teaspoon garlic powder

1 teas Lawrys Seasoning salt

1 14.5 oz can of petite cut tomatoes

2 tablespoons of beef stock (pictured below the type and brand)

2-3 cans of water depending on how many veggies you have in crock pot but enough to completely cover them

pepper to taste. no additional salt will probably be needed as the beef stock has salt plus the Lawrys

Brown the meat in a little Oil and butter (yes butter) and cook until meat is no longer pink. set aside

chop and cut veggies and add to crockpot with the tomatoes, water and beef stock! add seasonings and meat!

Turn Crockpot on high for 2 hrs then check to be sure you do not need to add additional water . Turn crockpot on low and continue cooking until veggies are done! This beef stock added amazing flavor and cutting up the stew meat into small pieces allowed the stew meat to be so tender.

Easy Peasy Chocolate Molten Cakes

Many moons ago began my love of these wonderful little gems! When i found this recipe around 2010, (and i have no idea where I got it) I realized that I had found a keeper that would be forever in my stack of recipes. I included it in my book Princess on the Porch on page 15, and the blog Chocolatecastles.com. But in case you just want to print it and keep it handy for the nights when you want something so gooey and chocolaty that is easy and quick, make this! You can make it in the afternoon before company comes and the. pop it in the oven for 16-18 min when you are ready for dessert! Last night was one of those nights! Have been craving this for a week but because we have some pretty special friends/neighbors who have dropped off chocolate cream pie one night and coconut cream pie anothe night, dessert was taken care of so last night was the night! We have two left over to have tonight when we get back from having mexican food for the fist time in a week!!

1/2 cup butter (1 stick)

1 4 oz bar of bittersweet chocolate broken into small pieces

2 teas vanilla

1 cup powdered sugar (not granulated)

2 eggs plus 1 egg yolk, room temp

6 tables all purpose flour

1/4 teas cinnamon

Powdered sugar, whipped cream or ice cream for topping

Preheat oven to 425 degrees

Grease 4 custard cups well

Microwave chocolate and butter in 30 s conf increments until chocolate and butter is melted and then stir until chocolate is completely melted. Stir in vanilla (or any liquor flavor you might like, even amaretto is good)‚extract and powdered sugar.

Whisk eggs and yolk. thenadd to cooker chocolate mixture. Stir in remaining ingredients. Spoon evenly into cups and place on baking sheet! Bake for 16-18 min or until the center looks jiggly and still shines! remove from oven and turn over into serving plate. you can top with either ice cream, whipped cream with fresh raspberries or any topping that you like. Last night I had some white chocolate raspberry ice cream that I put on top and it was delicious!

serves 4. Cover any remaining cakes and place in refrigerator to just reheat for 30 seconds in the microwave

If you make these in the afternoon just cover them and place in the refrigerator until time to place in the oven. if they have been refrigerated it’ll take a minute or two longer than that above posted baking time!

God of Second Chances

It has been awhile since I posted!  Because we are in a different season of life where we don’t travel or we aren’t able to participate in many of the activities that we did before, or even go many of the places around town that we use to, I have felt that maybe The Lord would not be able to use me as I quietly stepped away from the usual ways that I had served ! Seems that when we can’t do what we use to do that God can’t use us! In October of 2019 I had written a story of how God called us back to our home church when we moved back from CA and AZ!   As i wrote then, I used the story of Elijah and how God called him to go back the same way he came with “new vision and purpose”  and  also how  Jonah had tried to run away from the Lord to avoid doing what God had told him to do!   

This past Sunday, because of the weather and church was just online, we ended up watching David Jeremiah in San Diego where he is the pastor of Shadow Mountain Church!   He was beginning a new  series on Jonah (how does God arrange things like this?). We 

listened and as we read Jonah 1 where Jonah runs in the opposite direction from where God tells him to go, Dr Jeremiah pointed out that the Lord gave Jonah a second chance to do what God told him to do.  As much as I loved the sermon and thanked God of the many chances He has given me, it didn’t really resonate with me until last night!  Before falling asleep I began to think of all the ways God has allowed me to serve!  AND the years of serving Him in so many different ways came after He restored me from living a life when I too, tried to run away from The Lord, when I was certainly not living a life that honored Him!   As i thought back to all that He has allowed me to do and the blessings that have been given to me from serving, it just dawned, once again,  on me that God truly is a God of second chances and is able to always use us according to His purposes!   Why now, would  i think that He can’t use me, just because my life looks very different from my life 5 years ago.   The saying, “if i’m still here, He isn’t through with me” is so true!   And even if the ministry looks different than what I thought it should be, it shows me that my trust and faith in Him needs to grow and commit each day to allow Him to use me in whatever ways He desires!

it just amazes me that God once again, almost 7 years later, used the story of Jonah to remind me that He is and always will be the God of second chances!

Help me Lord to remember that no matter where i am, You are always there.  I cannot ever hide and that You are and always will be the God who loves me and wants to use me, no matter the season of life I’m in.  Help me to  serve You with  renewed vision and purpose every opportunity You give me.
