With Shannon and Jamin’s wedding rehearsal dinner, I had wanted to bake some good desserts for them. These gingerbread cupcakes were a hit! I had found the recipe which used a Duncan Hines spice cake mix as the starter! They were very moist and had so much flavor! Made a cream cheese frosting and topped each cupcake with a small gingerbread cookie we bought at Trader Joe’s!
